-=> Quoting Michael Loo to Glen Jamieson <=-

GJ> The jet streams are very useful if applied intelligently, which is why
GJ> the flight duration varies between going and coming, as often does the
 GJ> cruising altitude.
ML> As you know, we were nearly knocked off by those same jet streams
ML> going westward: I was hoping for a pit stop in Fiji, but we went
 ML> on to Brisbane instead.

When I was working for a hotel chain in Fiji, from time to time we had
unexpected groups requiring accommodation when adverse winds or
threats of cyclones forced trans-Pacific planes to over-night there.
The sudden arrival of 400 unexpected guests called for some rapid
organising by hotel staff. We had two hotels in Nadi, of pricing and
standards approximating to first/business and economy, so as far as I
know the passengers were accommodated accordingly. As I lived in one
of these, and had my office in the other, I had the opportunity to
chat with a few of the stranded passengers, who were all quite happy
to spend a night in Fiji at the airline's expense.

ML> As I recall, Trans-Texas Airlines was bought by Frank Lorenzo,
ML> who spun off New York Air. Trans-Texas (Texas AirCorp) took
ML> over Continental Airlines, retaining the Continental name (the
ML> same way America West kept the US Airways name), and by some
ML> kind of sleight of hand, rebought New York Air. Not too long
ML> after that, the new Continental went bankrupt, and I have no
ML> idea how or why it managed to wrestle itself out of that state.

From what I have read recently, many airlines these days don't own the
planes which carry their name or logo, but merely lease them from a
large, faceless and obviously wealthy multi-national company, so if
you think you have the necessary entrepreneural skills and a cute
logo, you don't need a lot of money to start an airline - just a few
people and pots of paint.

ML> New York Air apples were fresh new crop Red Delicious. The
ML> Continental apples were no doubt the same ones bought after
ML> the acquisition, recycled ad infinitem by Frank Lorenzo and
 ML> his successor Gordon Bethune.
 ML> I ruined this
GJ> little game by eating one of those apples; it was horrible! I learnt
GJ> my lesson and gave the apple back on the next flight.

ML> My father once opened one of those boxes of candy that are
ML> given to the hosts of dinner parties. It was amazing -
ML> probably near on a decade old and having changed hands
 ML> innumerable times.

There is an opportunity for someone to market high quality imitation
candies for that purpose. Of course they would have to carry a small
"Warning, do not attempt to eat" notice underneath the wrapping, but
as everyone (except the likes of your father) understands the purpose
of such gifts is not to be eaten, no one would object.

ML> Looking forward. The apricots we get, you will not be surprised
ML> to hear, taste more like potatoes than fruit.
GJ> Hopefully I will be able to serve you proper apricots when you arrive.

ML> Well ... you managed to serve some somewhat less improper ones.

You were a few days early. Now the shops are awash with large, ripe,
juicy apricots at $3/kg. Still a few loquats around.

GJ> The only side effect of the Wewak steriliser cooking was that some
GJ> doctors remarked on an odd smell of cooked pork associated with the
 GJ> sterile instrument packs.

ML> I take it there was not a sizable Muslim or Jewish constituency?

As far as I know there were no Jews in Wewak, and if there were any
Muslims, they were not working in the hospital. The main religions
there were Catholic, 7-days, Anglican, animist and alcoholism.

 ML> 250 ml Passum
ML> Boiled must from wine grapes. Substitute Tawny Port mixed
 ML> with a little balsamic.

Thanks. It so happens that I have those ingredients. :)

ML> Taken from an old Roman cookbook:
ML> MARCUS GAVIUS APICIUS: DE RE COQUINARIA. Posted by:
GJ> Using old Roman tea bags?
ML> Not my recipe, but I wouldn't have been surprised if the
ML> Romans had had such a technology - after all, bouquets
ML> garni and sachets and things have been around for a mighty
 ML> long time.

The old Romans were brilliant engineers, particularly when it came to
devices to enhance the quality of life.

      Title: Saltimbocca Alla Romana
 Categories: Italian
      Yield: 4 servings

      8 sm Veal cutlets
           Salt
           Freshly ground black pepper
      4 lg Slices prosciutto; halved
      8 Sage leaves
      3 tb Butter
      1 tb Cooking oil
           Flour for dredging
      3 tb Dry white wine
    1/4 Lemon

POUND VEAL CUTLETS to flatten them. Sprinkle with salt and pepper.
Lay 1 sage leaf on each piece of veal and top with 1/2 slice
prosciutto. Pin cutlets together with toothpicks. Melt butter with
oil in a large skillet. Lightly flour veal bundles and saute over
medium heat 2 minutes to a side (in two batches, if necessary).
Transfer them to a heated dish and remove toothpicks. Pour wine into
skillet. Over high heat, quickly stir and scrape up browned bits from
bottom of pan. Pour sauce over veal, squeeze on lemon, and serve at
  once.
