Somehow, when it's minus a hundred out, it just seems right. Especially
if you've been outdoors skiing or something.

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Sansei Seafood Restaurant And Sushi Bar Crab & Mango Roll
 Categories: Hawaiian, Crab
      Yield: 6 servings
 
      3 c  King crab
      3 tb Mayonnaise
      3    Pieces rice paper
  1 1/2 c  Diced Mango
      6 c  Mesclun Greens, loosely
           Packed
      1 c  Dry roasted peanuts
      1 c  Picked cilantro leaves
      1 c  Cucumber, sliced thin
    1/4 c  Cooked rice
      1 c  Rice wine vinegar
    1/4    Sake
    1/4 c  Mirin
    1/2 c  Sugar
      1 tb Chopped garlic
  1 1/2    Sambal
      1 tb Patis (Vietnamese Fish
           Sauce)
      1 ts Yuzu of fresh lime juice
 
  * Any crabmeat of shellfish will do, imitation as well.
  
  Crab: squeeze the king crab dry then add mayo. Refrigerate 20 minutes.
  
  Thai Vinaigrette Sauce: Heat sake and mirin in a medium pot. Ignite
  when warm to burn off all alcohol. Turn off heat and add sugar, which
  will dissolve. Add garlic to warm mixture. Add the sambal, rice wine
  vinegar and the patis. As an option add yuzu juice or any fresh
  citrus juice just before serving. This can be made in advance. It
  will also keep forever.
  
  Assembly of the Roll: Lay rice paper on cutting board. Lace top of
  rice paper with cooked rice. Add 1 oz. mesclun greens and spread over
  the bottom 3/4 of rice paper. Place 1/4 cup crab mixture across the
  greens. Add 2 oz. mango chunks and peanuts. Roll firmly using a
  bamboo sushi rolling mat.
  
  Plating: Ladle 1 1/2 oz. of vinaigrette in the middle of the plate.
  Put peanuts, cilantro and cucumber on outside part of plate. Cut the
  rolls in 4 pieces. Stand up 2 pieces in the middle of the plate.
