I wound up with a bunch of Dollar Off coupons for any size (larger than 
11.5 oz) 8 O'Clock. Got 'em on line and printed a raft of them. My 
places where I snag bean coffee will accept multiples - so long as there 
is no more than one per bag - which makes buying the little bags more 
economical overall than buying the 39 oz sacks.

      Title: Aunt Sutie's Comfort Banana Puddin'
 Categories: Puddings, Fruit, Desserts
      Yield: 6 servings
 
MMMMM-----------------------SCRATCH PUDDIN----------------------------
      5 lg Eggs
  1 1/2 c  Sweet milk
      1 c  Evaporated milk
      1 tb Vanilla
      1 c  Sugar
      1 tb Flour
        pn Salt

MMMMM-----------------------COMFORT CRUST----------------------------
           Vanilla wafers
      7    Bananas; ripe, sliced in
           Rounds

MMMMM--------------------------MERINGUE-------------------------------
      5    Egg whites
    1/2 c  Sugar
        pn Cream of tartar
 
  PUDDIN':
  
  If you ain't got one, rig up a double boiler by putting another
  pot inside a bigger pot with water in it and put it on the fire.
  
  Pour the milk into the heated pot. Mix together and add, very
  slowly, the sugar, flour and the salt to the milk, stirring
  the while. Don't stop stirring. Cook for about 20 minutes more
  after it has started to get thick.
  
  Reserve egg whites in a clean bowl and in another bowl beat
  the yolks. Stir a spoonful or two of the pudding into the yolks
  and mix thoroughly. Then add it all to the pudding and stir up
  very good. Stir and cook for 5 more minutes, take off the fire
  and fold in the vanilla. Now that's your scratch puddin'.
  
  COMFORT CRUST:
  
  In a baking dish make a layer of wafers and a layer of bananas,
  the pour on a layer of the puddin'. Keep doing this until all
  the puddin' is gone. But, remember, you must end up with a layer
  of puddin'.
  
  MERINGUE:
  
  Beat whites until peaked. Then add the sugar, a little at a
  time, and beat until the peaks curl over and hold. Spread the
  meringue over the puddin' and put in a 425oF preheated oven
  for 6 or 7 minutes. Careful not to let it get too brown. By
  the time you get to the wake or wherever you're going it will
  be set up good. It's also very good chilled.
