Today, I went with a few friends to a Thai noodle house, where
I asked for a dish (beef with peppers and rice) very hot, and
my friend Roberta, who is a regular there (I think the place is
called the OSHA Noodle Restaurant) told them "and he means it."
The dish came out almost fatally hot; nobody else could touch
it, and a number of stories went round the table about the first
time one of them ate in India, and the first time another of them
ate in Thailand, and so on. I enjoyed this dish and made a point
of eating every drop but not eating all the rice.

There are those of us who don't mind skin and bone, especially
skin. Picnic is the best cut for red cooking.

That's easy: toss together all ingredients, add a touch
of salt, put in a microwave dish, cover, and cook until done.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Gumbo W/okra
 Categories: Emeril, Cajun, Gumbo, Shrimp, Rice
      Yield: 6 Servings

    1/4 c  Vegetable oil
      2 lb Okra, washed in cold water
           Caps removed and tips
           Cut into 1/4 in rounds
           Essence
      2 c  Tomatoes, peeled, seeded
           And chopped
      1 c  Chopped onions
      1 c  Chopped celery
           Salt & Cayenne
      5    Bay leaves
    1/2 ts Dried thyme leaves
      1 tb Minced garlic
      8 c  Water
      2 lb Med shrimp, peeled and
           Deveined
      2 c  Cooked white rice, warm
      2 tb Chopped green onions

  In a large pot, heat the oil. Fry the okra, stirring constantly, for
  10-12 minutes or until most of the slime disappears. Season with
  Essence. Add the tomatoes, onions, and celery, stirring occasionally,
  cook for 18-20 minutes, or until the vegetables are wilted. Season
  with salt and cayenne Add the bay leaves, thyme, garlic and water.
  Stir and bring to a boil. Reduce to a simmer and cook for 15 minutes.
  Add the shrimp and cook for 30 minutes. Serve with rice and garnish
  with green onions and Essence. Yield: 6 servings
