They arent all late season, no <g>  Early season and any time after that.  We 
also pickle them and make relishes.  Too green and they can make you sick, but 
once they are the same size pretty much as they are going to get and starting 
to yellow just a bit, good eating.  Dont eat when they are still as deep a 
green as the stem and leaves. (I dont think they will kill you at that stage, 
pretty sure they will not, but they taste awful).  If in doubt, once you see 
yellow streaks, totally safe to cook them up.  Far as i know, safe raw then 
too.

I love grits. I sometimes (when I could get them, hard to find here) would make

up extra then make 'fried grits' the next day.  Trying to make something like 
that here, is how I came up with my 'butter fried rice'.  It's good but 
different.
