Turns out it's because she can use it untended <G>.  All she needs from us, is
to move something or other off the counter to make room for it and she's ready
to make her own stuff.

Now that she's officially 5ft, she really can reach the stove well enough to
cook but she's still a little scared of it, just a bit.

I barely do, but this one is a good thing.  1 smaller can will make 5 batches
of brussells so you can see we arent going crazy with it.  The alternative for
us would be bacon fat most of the time.  Usually though, I dont add any fats
to it other than a little butter.  I'm out of an area where getting just a
small chunk of ham is an easy thing.  I remeber though in Virginia Beach, we
used to get bags of 'ham bits' pretty cheap and i used to cook with them.

Sounds good!  How did it turn out?  I've never tried to make dim sum myself.

I have a steamer but it's metal.  Less finicky in the end and works as well
though with a few things, you have to lightly oil the upper basket.  Not much,
just flip a paper towel over the olive oil jar then invert to make a little
dabble and rub it around.

Oh, you need to lightly oil a bamboo steamer now and again to keep it 'happy'
for a long time. Olive oil works well for this.  Crisco and things like wesson
oils will get 'gummy' after a bit and wreck the thing.
