Just thinking to the end of the month. If family things start
taking up more time than you budgeted, don't feel obligated
to overexert on our behalf; we can pick up the ball and largely
take care of ourselves if necessary. We even could be helpful!

Well, sometimes I think that this feast or famine thing has
been what has put me on the border of extra-sweet ... so,
no, probably not healthy. If I'd kept up the exercise and
not hung around with exertion-averse friends like Nicholas
and Carol, I could probably have supported these unhealthy
habits for a long while - I had been doing so for a couple
decades at least, maintaining low and stable blood sugar
and an athlete's heart. Now all I've got in that way is
athlete's foot.

Being an underdog supporter, my favorite veggies are eggplant,
okra, and spinach. I like green tomatoes better than red,
even though they smell poisonous.

But more importantly, no feta and leeks!

It would have been most convenient for me to go in to Binghamton
and out of Syracuse, but it turns out that that would have added
over $200 to the travel expense, so that's not in the cards.

Fried green tomatoes with Creole dipping sauce
cat: starter
servings: 8

4 green tomatoes, sliced 1/4"
1/4 c flour
1 Tb sugar
1/8 ts cayenne
s, p
1 c buttermilk
1/2 c cornmeal
1/4 c oil
1 hd frisee or other lettuce
h - Creole dipping sauce, optional
1 c mayo
1/2 lemon, juice of
1 Tb minced capers
1 Tb minced onion
1 ts Dijon mustard
1 ts horseradish
1 ts paprika
4 sprigs parsley or cilantro, chopped
1/2 ts Worcestershire

Combine flour, sugar, cayenne, salt, and pepper. Dust tomato
slices on both sides with flour mixture. Dip floured slices
in buttermilk and then dust on both sides with cornmeal.

Fry in hot oil, adding more oil as needed, until light
golden brown on both sides. Serve on lettuce with Creole
dipping sauce if desired.

For the sauce: mix ingredients well and refrigerate until
ready to use.
