I like reducing SOME of the fat in SOME recipes by substituting
fruit purees but not 100% and not pancakes. Muffins and quickbreads
are good candidates for 2/3 butter, 1/3 puree.

That's the only kind I ever get. If you can't handle porridge
straight up in the morning consider fruit bettys, granola sprinkled
on fruit and muffins. I do use oatmeal but rarely make porridge
(maybe about once a winter when I am feeling nostalgic for my
childhood).

I can't recommend this next recipe; it is from a British WWII ration
cookbook for meatlesws days. Just thinking about it will make your
porridge taste better!

MMMMM-----Meal-Master - formatted by MMCONV  2.10

     Title: WWII Woolton Pie
Categories: historical
  Servings: 4

           salt
      1 lb potatoes
      1 lb cauliflower
      1 lb swedes
      1 lb carrots
    3/4 pt vegetable water
           vegetable extract
      1 oz rolled oats
      4    chopped spring onions
           mashed potatoes
           grated cheese
           brown gravy

Dice and cook around one pound of each of the following in salted
water; potatoes, cauliflower, swedes, carrots. Strain, but keep
three quarters of a pint of the vegetable water.

Arrange the vegetables in a large pie dish or casserole. Add a
little vegetable extract and about 1 oz of rolled oats or oatmeal to
the vegetable liquid. Cook until thickened and pour over the
vegetables; add three to four chopped spring onions.

Top with mashed potatoes and a little grated cheese and heat in the
centre of a moderately hot oven until golden brown. Serve with brown
gravy.
