   Not only that, but I'll bet that you enjoy what you are doing more
   than before you retired.   After I retired, I became a part-time
   consultant doing work similar to what I had done for the government.
   However, I did not have all the schedules, rules, regulations and
   paper work to clog me down.   It was more fun!

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Winter Casserole With Stilton Dumplings
 Categories: Cheese, Beef, Casserole
      Yield: 4 servings
 
  1 1/2 lb Stewing Beef, cut in chunks
      1 lb Onion, peeled and chopped
      4 md Carrots, peeled and cut into
           -even pieces
      2 md Parsnips, peeled and cut
           -into even pieces
      1 lb Potatoes, peeled and cut
           -into even pieces
      2    Sticks Celery, cut into even
           -pieces
      2 tb Oil
      2 tb Flour
      4 fl Red Wine
    1/2 pt Beef Stock or Water
      2    Bay leaves

MMMMM---------------------FOR THE DUMPLINGS--------------------------
      6 oz Self-Raising Flour
      3 oz Suet
      3 oz Grated Stilton
      1 ts Chopped Herbs
           -Water
 
  Heat the oil in a large casserole. Add the beef and brown all over.
  Add the onions and cook for a few minutes until the onions are soft.
  Sprinkle on the flour, mix in well then add the wine, stock or water
  and bay leaves. Simmer and add the vegetables. Cover and cook gently
  for 2-2.5 hr. To make the dumplings, mix all the ingredients and add
  enough water to make a firm dough. Roll into 8-12 even sized balls.
  Add to the casserole for last 30 min cooking time. Remove the lid
  for the last 10 min and transfer to a hot oven 400F/200C/Gas 7, to
  brown the dumplings. Remove the bay leaves before serving. Serves 4.
