Funny, we focused on other things. I saw a scrapple platter,
fried chicken, sausage, smoked pork chops, and traditional Penn
Dutch (Deitsch) sides first, then the culinary school graduate
food after. According to the site, the chef started cooking there
as a kid, then went to school, then bought the place. So it serves
a dual clientele - the folks who want to eat the old food and the
ones who want to eat culinary school graduate food. The chronology
is imperfect on the history of the place ...

If we should choose to go the more easterly route, this would be
my first choice. It's at an appropriate place on the journey and
has (as I noted) some interesting things that I'd like to eat.

The other day I was on the bus to Dulles from downtown, which
goes by the Pentagon ... the guy next to me asked where the
Pentagon was, so I told him, we'd be coming right up on it,
and then he insisted on taking all kinds of pictures across me
to the building ... I don't think he was any kind of spy or
anything, just a military buff.

POO JAH (Thai Stuffed Crab)
Cat: Thai, main
Makes: 4 servings

2 c crabmeat
1/2 c ground pork
1 c chopped shrimps
2/3 Tb chopped garlic
1 ts ground white pepper
1/2 Tb chopped cilantro roots*
3 Tb Golden Mount or Maggi sauce
1 jumbo egg
8 cleaned and dried crab shells
1/4 c chopped cilantro leaves
2 Tb red chilies, silvered
oil for frying

* Substitute 2 ts chopped cilantro stems

Combine crabmeat, pork, shrimps, garlic, pepper, cilantro
roots, and sauce. Stuff in each crab shell and pack tightly.
Sprinkle cilantro leaves and red chilies. Smooth the surface
and press down securely. Bring a lot of water to a rapid
boil in a steamer. Arrange the stuffed crab shells. Place
several layers of paper towels on top of the steamer, NOT
the food, and replace the cover. Steam 20 min and remove
from heat. Cool.

Beat the egg in a bowl. In a large wok, heat lots of oil
over med-high heat. Dip the stuffed crabs in the egg and
fry meat side down until golden brown. Remove from oil
and drain well. Cool slightly and serve immediately.
Serve with Thai Sriracha chili sauce as an appetizer.

NOTE: Do not fry the crab too long as the stuffing will shrink
and fall out of the shell.
