This brings to mind my early days and cooking at a truck stop one summer. We
had a scrap soup like that with a series of crockpots (my inspiration to go
crockpotting comes from this place).  Foodcops now would probably go crazy
that we used wilting veggies and meat scraps from main entrees that went
uneaten (special of the day, you always have some left over).  I assure you
it was all perfectly safe to eat food.

College students would come in late at night when studying for a test the
next day and just glommer a table with books and a bowl of whatever smelled
best that day.  75cents for a BIG bowl.  25cents for 2 slices of texas cut
toast to go at the side.  5 cents for a pack of 4 saltine crackers (had to
charge for that or some would eat us out of business).  

I have no idea if the 123 truck stop is still there, but it might be.  Tips
were not great but steady and they paid up to minimum wage (I think that was
2.65 back then).  Truckers I found (at least there) are happy to add 10% or
so but the meals were cheap so rarely did you get more than 50cents or so.
But they were nice folks and steady arrivals and departures made that
25-50cents work well enough.
