Typically you do need to make some.. that insert makes the best roast chicken
we've ever had in our lives, as well (seriously :)).  I've killed a few things
in it soon after I got it as I experimented with varying temperatures (g).

This is the HearthKitchen Company's  recipe for 'European Artisan Bread'. You
have to preheat the HearthKit insert for 30 minutes before roasting/baking,
etc. You can use their method to create steam, or just spray with water
bottle.. This is what they suggest:  "To create steam, put a cast iron pot in
the oven before you turn it on. After you slide the loaf into the oven,
carefully pour 3/4 cup water into the pan to create steam, and immediately
close the oven door."

=======Artisan Bread in Hearthkit Ovenkit==
Prep time 1/2 hour
Fermentation: 1 1/2 hours at room temp., 70-72F Proofing: 35-40 minutes at room
temp. Bake: 25-30 minutes.

Unbleached bread flour  1 lb, or 3 1/3 to 4 cups Fine sea salt           2 tsp.
Instant Yeast           1 tsp.
Water                   10 oz. or 1 1/4c
Cornmeal for peel or baking sheet

Now they go through the instructions after the ingredient list to explain how
to make dough in a food processor.. I'll skip that.. Since I use the KA, I use
the rapid mix method, and put all dry ingredients in the bowl, mix that with
the dough hook, then I pour in the water and mix and knead with the dough
hook.. Most bread recipes using Bread Flour, and kneaded with the KA take about
2-4 minutes to knead.

Let the dough rise for 1 1/2 hours. Shape the dough into a large single loaf,
let rise again and slice a gash down the center of the loaf.

For whole grain breads, I'm not sure how long the kneading would take. This
mixer should be able to take up to 12 cups all-purpose flour, 8 cups whole
wheat flour, maybe 6-8 cups bread flour..

It's a nice machine, really.  They don't make them as sturdy as they did when
Ron bought my first one, but they are good mixers.  I still have the first one
Ron bought for me some 25 years ago, but it needs a gear.
