We have done turkey several times.  For it, I am using a simple brine of
kosher salt and brown sugar.  Don't use the pickling spices I put on the
pork.  This time, we got a whole, medium sized bird (14 lb raw) so that
Michael and others could have their dark meat.  Given the size of the
smoker, we also did two 7lb turkey breasts at the same time.  Split one
in half to share with two of our close neighbor friends.  The guy next
door was out cutting his grass and said that he could smell it cooking
even over the lawnmower smell.
 
I seem to have settled on on liking apple chips for everything.  It is
not a harsh smoke.  I used some old hickory chips on a set of chicken
breasts and they ended up not getting much smoke at all.  I still have
mesquite and pecan which have not been used.

The recipe below might be half decent, but I would not bother cutting up
the crumpet into sections if doing it as a snack for ourselves.  I guess
the directions would be right if making it as a party platter though.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Bite-Size Pepperoni Pizza
 Categories: Appetizer, Diabetic, Microwave, Meat, Italian
      Yield: 1 servings
 
      4    English Muffins
      8 oz Pizza Sauce
    1/2 c  Onions, finely chopped
      8    Green Pepper Rings,
           -quartered
     16 sl Pepperoni, cut in half
      1 c  Mozzarella Cheese
           -(reduced-calorie),
           -shredded
 
  Split the muffins in half and toast them in the toaster.  Spread the
  pizza sauce on both halves of the muffins.  Top with the onions.  Cut
  each muffin half into four pieces.
  
  Place the eight muffin pieces in a circle around the edge of a paper
  plate (four plates will be used). Lay one-quarter section of the green
  pepper on top of each muffin piece.  Place one-half slice of the
  pepperoni on top of each muffin piece.  Top evenly with the mozzarella
  cheese.
  
  Place each plate, uncovered, in the microwave, and cook on HIGH for 1
  minute; rotate each plate one-half turn after 30 seconds.
  
  Yield: 32 servings
