I have experienced "TexMex" in Houston, and found it can be good, but
not really Mexican.  The restaurants in Mexico just across the border,
such as in Matamoros and Reynosa where day-trippers from USA go to eat
after buying their cheap perfume and Viagra, are definitely geared to
USAn tastes, with menus in English, and dishes listed with "American"
or "Mexican" cheese (orange or white).  Further south, in Monterray,
the food becomes more purely Mexican, with lovely aromatic roasted goat
legs.  Nearer the West coast, in the highlands between Chihuahua and El
Fuentes, the food is quite different, with maize and chicken and cheese
becoming more important in the diet.  I have enjoyed excellent frijoles
refritos in both areas, and also San Antonio.

Haha!  Something I love, but which I have not been successful with.

Do they serve a good menudo?  That can be quite bland, or well spiced.

Good, but I do like young goat - "cabrito".

Although their usual diet is fruit, possums are good survivors and can
eat all sorts. In N Z, where they were introduced from Australia and
have become a much-hated pest, it has been reported that in some places
they have mutated to a larger size and become carnivorous.

For young backpackers from London or Amsterdam, to look up into the
face of a possum in the middle of the city, really gives them a thrill!
