DD> patty with his very stiff spatula. They are as close to hand-formed as
DD> you can get in a chain restaurant.

ML> Does each unit have such a machine, or are the burgers trucked
 ML> in from a commissary?

Commissary supplied daily. My local S&S operations are one of the few
franchises in the S&S chain. George Stuller loaned Gus Belt some money back
when Gus was getting started. It was, as they say, money well invested. Stuller
has its own commissary.

DD> but as they are fairly fatty they carry quite a bit of flavour.

ML> As long as the fat isn't rancid ...

The meat is fresher than that.

ML> Does the chili have beans, that's the question.

DD> Nearly all restaurant chilli has beans in it. Beans are
 DD> much cheaper than meat.

DD> The Steak & Shake recipe is/was originally from Ray DeFrates (of
DD> Sprin-A-Leak) who lost it to Gus Belt in a poker game back in the early
DD> days of Steak & hake.

ML> Relation to Joe DeFrates? Or to that DeFreitas guy who tried to
 ML> blow up JFK airport?

Uncle to Joe DeFrates. He and Port (Joe's dad) were brothers.

ML> Boiled taro (Shenk) - what can I say. It was good, in an
 ML> elemental get-those-calories way.
DD> Was that the "sort-of-like" boiled potatoes stuff that was
 DD> actually spuds?

ML> It was "actually not spuds," but yes.

That's what I meant.

DD> Kind of bland and mushy

ML> People found a pleasant though mild sweetness. I like mine
ML> further processed. Deep fried is very nice, as is stewed
 ML> in meat gravy.

It was Ok. A bit of salty gravy would have improved what was on offer.

DD> Oh yes. Quite nice. And the Saturday afternoon plate of carmelised
DD> skin got laid to waste by moi

ML> So you're the reason Dale didn't get any!

ML> ... one of my few overindulgences the
 DD> whole picnic. It was
DD> rather like the Granny Goose potato chip add - "No one can eat just
 DD> one!"

ML> I thought that was the "De-Lay-cious" campaign starring the
ML> Cowardly Lion (whom I did not see in that role until just a
ML> few years ago, and I still have not sat through the entire
ML> movie beginning to end). He was supposed to have been a semi-
ML> nice guy, as opposed to Ray Bolger, who was said to have been
 ML> a semi-nasty one.

ML> I seem to remember Lahr leering into the camera and saying,
ML> "Bet you can't eat just one!"

I think Granny Goose may have paraphrased the Frito-Lay slogan after the state
of Califunky made them take down the billboards asking "Are You MAN Enough To
Eat Granny Goose???" Mrs. Grundy at her worst.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Fresh Corn Spoon Bread
 Categories: Breads
      Yield: 6 servings

      2 c Whole milk
    1/3 c Yellow cornmeal
  1 1/2 c Fresh corn kernels
      1 tb Unsalted butter
      1 ts Salt
      4 lg Eggs; separated

Celebrate the arrival of summer's corn, here softly set in
  a spoon bread.

  Preheat oven to 425ºF.

Bring milk, cornmeal, corn kernels, butter, and salt to a
boil in a 3-quart heavy saucepan over moderately high heat,
stirring frequently, and simmer, stirring constantly, until
thickened, 3 to 4 minutes. Remove from heat and cool 5 min,
stirring occasionally, then whisk in yolks.

Beat whites and a pinch of salt with an electric mixer at
medium speed just until soft peaks form. Whisk one fourth
of whites into cornmeal mixture in pan to lighten, then
fold in remaining whites gently but thoroughly. Spread mix
evenly in a buttered 9 1/2-inch deep-dish glass pie plate
or 1 1/2-quart shallow casserole and bake in middle of oven
until puffed and golden, 15 to 20 minutes. Serve immediately
(like a soufflé, spoon bread collapses quickly).

  Active time:15 min
  Start to finish:35 min
