ml-> Cheddar tasting (Fords) - listed in my preference order; thanks
ml-> to Burt for the most luxurious display of the lot. Of course,
ml-> as he didn't do any cooking at all, he owes us a little extra
ml-> for the labor that he didn't do. There have to be some
ml-> disadvantages to being the resident Eat, after all.

I have been noticing that folk are making a bit more noise about me
becoming a cook.   And at the Picnic this year, for the first time, I felt
a bit bothered that we were the only couple not really contributing to the
atmosphere and work.  I began to feel a bit selfish.  I'll have to do some
thinking about the Picnic.


Re some of the cheeses:
ml-> Grafton reserve ($17.49) - very good, meaty, rich flavor,
ml-> a bit more acid than the others

My second favorite.  But I will not buy it often.  For that kind of money I
want a 'rarer' [to me] cheese.   Something from the arcane cheese shelves
perhaps.  [g]

ml-> Black Diamond grand reserve 2 years old ($10.49) - tart,
ml-> more milk presence than the others; some crystals but still
ml-> quite good

Years ago I realized that I'm a sucker for crystals/grain in Cheddar.  
They seem to guarantee what I think of as umami.  Once a cheddar becomes
granulated I love it.  Up to and including the 15 year old, crunchy cheddar
that JimB brought to a picnic years ago.   

ml-> Heluva Good XX 4 1/2 years old ($9.49) - some granularity,
ml-> tart with a bitter note; lots of umami; good

With out question my favorite.   I have to travel up to Sodus on route 104
to get it, but I am going to make the trip again, soon.  [it's not very
far]  And such a bargain.

ml-> Adams reserve XX white ($7) - good, good value, a bit milky
ml-> for my palate; smooth

XX?  Didn't taste XXtra sharp to me.  I was disappointed in it, as I like
sharp cheddar the best.

ml-> Heluva Good smoked ($6.29) - rather soft; good smoke, decent
ml-> tang; texture ranks it down to okay

I don't care much for smoked cheddar.  Seems out of character.

ml-> Adams reserve XX yellow ($7) - gummier than the white, and
ml-> about as milky; texture downrated it

I am prejudiced against the yellow cheddar.  I think because it was often
the cheese distributed by Welfare when I was a kid.   Bad connotations.

ml-> Cabot 75% reduced fat ($6.49) - rubbery, no taste, bad; Burt
ml-> encouraged everyone to taste it as an example of what cheese
ml-> should not be like.

I note that Wegmans now has a 50% reduced fat cheese.  I couldn't look at
it long enough for the kind of cheese to register.  But I'll have to try
it.
One lives in hope.

Wegmans, by the way, let me down.   I waited until the last minute so the
cheeses would be fresh.   They promised that they would be getting their
shipment on the 29th. of July.   It did not happen, so the range of
Cheddars  I could get was limited.   I had hoped for more foreign cheddars.   

Based on the Irish cheddar, maybe it's just as well.   [g]
