When I was young, I tried all sorts of "diets"... fad, sensible and
semi-sensible, you name it...  What really changed my thinking was one
of the supposedly sensible, nutritious ones, that held one to 1000
calories a day.  I lost a fair bit of weight on it... then, not only
plateaued, but started to gain it all back... and I was strictly
following it, no cheats AT ALL...  Turned out it had shut my metabolism
down.  Never again.  I think that may also have been the diet that
proved that saccherine was causing migraines for me.

Nowadays, I just try for a variety of foods in as natural a state as is
reasonable, with a minimum of artificial ingredients and preservatives. 
I don't obsess over anything, but we do try for a balanced and healthy
diet.  We drink whole milk, use butter/canola oil (when we use anything
of that nature), but also use whole grains and plenty of vegetables
along with a variety of protein sources from meats to grains and
legumes.  Sweets have real sugars in them.  We generally manage to keep
portion sizes reasonable... but don't obsess over that either...   I'm
still most likely to gain weight when I DON'T get enough to eat,
otherwise I'm happy to maintain... and pleased when I manage to lose
some on its own, which I then try to maintain.

Plain water doesn't sit well for me, usually.  At restaurants I have it
with a slice of lemon (or lime), and I guess the ice-cold helps it too. 
I do get the lemon- or lime-flavored seltzer water to drink at home, and
that isn't too bad.  I decided I didn't like the other flavors it came
in, and I won't drink the artificially-sweetened varieties.

Good luck to you.  It seems to be easier usually for guys to manage...
their metabolic structure tends to help the process more.  And the right
exercises can keep things limber... ;)  But there's really no need to be
obsessive about all of it... youthful figures were meant for youth...
and getting the figure back doesn't bring back the youth...  ;/
