1. No. 2. No. I'm pretty immune to that sort of thing, Proust
notwithstanding. I do get emotionally attached to certain
smells, but food is kind of secondary - if I were swayed by
its seductive scents, I'd be bigger than a house. There is one
food smell that almost Proustizes me: roasting beef fat.
But anything that grows out of the ground, certainly never.

Depending on the way the wind is blowing. Tell me about the
South-East Asia Hotel. How did you choose it?

They'll probably offer some sort of substitute, such as Air Berlin
or something, in the unlikely event they pull out of Barajas.

The major talk is of SAS unloading Spanair in its entirety, but
that wouldn't necessarily mean a cessation of services.

It was I believe somewhat gentlemanly, as I have not heard
that legal complaints were involved. The nongentlemanliness
refers more to the presence of the bloodsucking leeches, not
to that they were called upon to do their worst.

That's a version that errs on the side of sweetness - I've
posted both sweet and less sweet varieties. Tried to find the
Beaufort Sentosa version but was unsuccessful. This one,
also attractive, will have to do.

Chilli Crabs
cat: Australian, shellfish
servings: 4

4 crabs, cooked, cleaned and halved
3 cloves garlic
1 ts fresh grated ginger
4 chopped spring onions
1 c white wine
1 sm can tomatoes
1 red chilli, seeded and finely sliced
olive oil

Mud Crabs should be alive until the last minute, as they go off
quickly, but swimmer crabs last longer. Keep live crabs in wet
hessian bag as there's more oxygen available than in a bucket of
water. Never put a live crab into boiling water as this toughens
the meat and claws may fall off. Drown or chill crabs first, then
place in cold water, bring to the boil and simmer for about 8 min
per 500 g.

Brush a large pan or wok with oil, saute garlic, ginger, and
spring onions. Add chopped tomatoes, wine, and chilli and simmer
for 10-15 min. Add crabs, toss in mixture, simmer 3-4 min, and
serve immediately.
