Picnics past

White folks are encouraged to hold their noses while eating.
I've never seen anyone actually do this, but I hang out with
a classier brand of white folks than normal, I suppose.

The main problem for me isn't the taste or the aroma, it's
rather that most of the durian eating opportunities I've had
have been close to air travel dates, and the jet propulsion
engendered by the fruit would make the other passengers want
to strap me to the wings like another engine ...

Picnics future

Various southern folks were talking about it even before this
year's picnic happened. Don't think it's been determined yet
who will win the prize.

The present is a picnic by comparison

Ah. I've never had an office. Worked in one briefly when I was
in college and grad school but never was under the illusion
that that was the environment for me. Of course, musty smelly
cramped orchestra pits were always more to my liking.

Linguine with Chicken, Walnuts and Mascarpone Cheese
cat: pasta, main
Servings: 4 to 6

1 c (4 oz) walnuts
1 Tb butter
3 Tb extra virgin olive oil
1 lb chicken breast, boneless, skinless, julienne
salt
freshly ground black pepper
2-3 gratings fresh nutmeg
1 c chicken stock
1/2 c mascarpone cheese
1 ts Lemon zest
1 lb linguine
1 c fresh basil leaves, cut into thin strips
1/2 c Parmigiano cheese

Linguine con Pollo, Noci e Mascarpone

BRING a large pot of water to a boil.

SAUTE walnuts in a large skillet over medium heat for
1-2 min or until slightly browned. Chop and set aside.

HEAT butter and olive oil in the same skillet over
medium heat. Add onions and saute 3-5 min or until translucent.

ADD chicken, season  with salt and pepper, and saute 3-5
min or until chicken is cooked through and tender. Remove
chicken from pan and set aside.

ADD nutmeg and chicken stock to skillet with cooking juices.
Cook on high heat until slightly reduced, 3-4 min. Remove
skillet from heat.

ADD mascarpone cheese and lemon zest, stirring until cheese
is melted. Adjust seasonings as desired.

COOK pasta according to package directions. Drain and add
pasta to skillet. Toss gently.

ADD chicken, walnuts, basil and parmesan cheese. Transfer to a
serving platter or bowl. Top with additional lemon zest and
basil springs if desired.
