I have railed against the practices lately in use in the worship of "this
period's profits". Large soapbox rants against the oligarchs of the factory
food industry. So, I'll not post another just yet.

But, I will remind all and sundry of the benefits of A) raising your own and B)
buying fresh, local and sustainable.

The food tastes better, is better for you and does less harm to the
environment. 
Plus, it does nothing to enrichen the "suits in the front office".

      Title: Cinco De Mayo Chicken Salad
 Categories: Poultry, Salads, Spreads, Chilies
      Yield: 4 servings
 
      3 c  Cooked, shredded chicken
    1/3 c  Sour cream
    2/3 c  Mayonnaise
      2 tb Fresh lemon or lime juice
    1/2 ts Ground cumin
    1/2 ts Salt
    1/4 ts White pepper
      1 ts Cayenne or jalapeño sauce
    1/2 c  Sliced carrot
    1/4 c  Diced red bell pepper
    1/4 c  Finely chopped white onion
      2    Small, ripe Haas avocados;
           - chopped
      2 tb Chopped fresh cilantro
 
  In a small bowl, stir together the sour cream, mayonnaise,
  lemon or lime juice, cumin, salt, white pepper and tabasco.
  This mixture is the salad dressing, so taste it and adjust
  the seasonings, if desired.
  
  In a separate bowl, combine the chicken, carrots, red bell
  pepper, onion, avocado and cilantro.
  
  Pour the dressing over the chicken and vegetables and mix
  well. Chill for at least 1 hour before serving.
  
  Makes about 4 servings.
