All we have is a Sam's Club ... and since they are a (big) part of Wally World
I don't go there. Been trying to entice Costco (whose nearest location is about
a hundred miles from me in a suburb of St. Louis) to locate a store in
Springfield. I've put them in touch with the owners (an estate of a developer)
of a vacant K-Mart (formerly Venture/Woolco/etc.) with lots of square footage
and plenty parking and traffic count. The developers people tell me that if the
deal gets done I will get a nice "finder's fee". That's not the reason I am
doing this - but, the extra dosh will be nice ... if it comes to pass.

I've not used one of those yet - but, I am considering it. I am also going to
ask my croaker to see avoub getting a handicapped placard for my car - my feet
don't want to take much walking before the dogs begin to bark rather loudly.

Integrity counts for a lot. Which is the main reason that I shine Wally World
on. Really.

      Title: Grilled Salmon W/Green Chile Sauce
 Categories: Seafood, Chilies
      Yield: 6 servings
 
      6    (6 oz ea) salmon steaks
           +=OR=+
  2 1/2 lb Skinless salmon filets; in 6
           - equal pcs
           Olive oil
           Salt & freshblack pepper

MMMMM------------------------CHILE SAUCE-----------------------------
      2 cn (4.5-oz) chopped green
           - chilies
      2    Green onions; fine chopped
    3/4 c  White wine
  1 1/2 c  Heavy cream (whipping
           - cream)
           Juice of half a lime
           Salt & pepper
 
  Even when prepared with only butter and lemon, grilled salmon
  makes a special meal. But this creamy sauce enlivened with
  green chiles is an excellent accompaniment.
  
  Make the Green Chile Sauce: Place the chiles and the chopped
  green tops of one of the onions in a blender and purée until
  smooth. In a skillet, bring the wine and finely chopped onion
  (white part only) to a boil and reduce by half. Add the cream
  and continue boiling until entire mixture is reduced by half.
  Reduce heat and stir in the chile purée and lime juice. Keep
  warm until salmon is ready to serve.
  
  Grill the Salmon: Brush the grill surface and the salmon with
  olive oil to prevent sticking, and grill the salmon over hot
  coals, uncovered, no more than 5 minutes per side, depending
  upon thickness. Baste both sides during grilling with
  additional olive oil. Serve at once topped with a generous
  portion of Green Chile Sauce.
  
  Note: Salmon lends itself well to grilling, but don't let it
  dry out or stick to the grill. If you are using salmon filets,
  be sure that the skin is removed from both sides. You may have
  to ask the man behind the meat counter to remove the skin
  from one side, if that's the way your store sells salmon
  filets, or you can remove it yourself with a very sharp,
  thin-bladed knife.
