That would keep them flat-out with rehearsals, travel and performing.

No mention yet of 11th September travels.  Did you do so this year?

I depart on Monday for Western Europe, so will be out of touch with the
Echo for the next 40 days and 40 nights.  Hopefully I shall return with
some reports of interesting food and drink consumed during my travels.

Your reports on dining at Nicholas's were very interesting, and made
good reading, but did you find you were suffering from sensory
overload, dealing with all those glorious wines?  I would have thought
that any one of those special collectors' items would have been enough
to be the star of the evening, and all its characteristics could be
then savoured in full.  And as it would have been a grievous sin to
have to spit out such wines, inevitably the partakers would become
moderatedly (or more) sloshed and their analytical palates dulled.

      Title: Coq Au Vin Jaune with Morels (Franche-Comte)
 Categories: Chicken, French, Tnt, Loo, Cajun
      Yield: 8 Servings
 
      1    Young rooster of 4 1/2 lb
           -- cut in 8 serving pieces
           Flour
      4 dl Vin jaune; Arbois or
           -- Chateau-Chalon
     80 g  Butter
      1 l  Creme fraiche
    400 g  Morels
           Salt
           Pepper
 
  A classic holiday dish from the Franche-Comte: it combines cream and
  fresh morels with the classy and horrifyingly expensive Vin Jaune
  that is characteristic of the region. If morels are out of season, it
  is best to leave them out altogether [M likes dried reconstituted
  ones, though]. Serve with rice cooked in chicken stock or else with a
  creole rice.
  
  Preheat oven to 410F (210 C).
  
  Rub the meat with salt and pepper; then dredge in flour. In an
  ovenproof skillet, cook the meat in butter until it is firm on all
  surfaces but not at all browned. Cover and bake for 20 min. Remove
  from the oven and put on a medium flame. Deglaze with the wine. Lower
  the heat to minimum, add the cream, and stir. Add the morels, which
  have been carefully cleaned of grit and dirt. Let reduce uncovered
  for 30 min. Season to taste.
  
  Put the meat in a deep dish, cutting up pieces if they are too big to
  serve. Top with morels and sauce. Serve rice separately.
