Welcome (almost) back :)  Glad things were not worse for you down there!

I saw what you meant about Cherokee Park.. that is so sad.

And it's beautiful (or was :( ).  I didn't know that it had been designed by
Olmstead until you mentioned it.

So glad to hear that :)  I know when I was living in Louisville, LGE was great
about listening to people who needed their electric on because of disibility.

I've got two recipes that might help.. not sure what other meats you have
besides Sausage..

1)===Rici e Bisi (Rice and Beans/Peas)=== 1 cup white raw rice
1 10 ounce-package frozen peas
1 teaspoon salt
6 tablespoons butter
1/3 cup chopped onions
2 tablespoons parsley, chopped
2 cups water or light chicken bouillion. Optional: 2 tablespoons parmesan
cheese, grated (if all you have is another type of Italian cheese, you can use
that.. or don't serve with cheese :)).

Heat 3 tablespoons of the butter in a sauce pan.  Saute onions and parsley in
the butter, don't let it burn.  Add the rice and saute for 5 minutes, stirring
frequently. Add 2 cups water to the rice or light chicken boullion to the
rice..  Heat the water and rice to boiling, and reduce the heat to low. Simmer
for 14 minutes. Cook the peas, drain well and stir the cooked peas and
remaining butter into rice. Top with locatelli romano cheese and serve.

2)==Sausage and Rice==
4 cups warm, cooked rice
1/2 to 1lb. sweet or hot italian sausage links, sliced into 1" pieces 1
tablespoons butter and 1 tablespoon olive oil 1/2 cup mushrooms, diced
1 cup onion, diced
1 green pepper, diced
2 tablespoons locatelli romano cheese 1/2 cup raisins
1 diced banana
1/2 cup pignoli nuts or walnuts
3 hard-boiled eggs, chopped
1/2 cup of a mix of chopped fresh herbs: parsley, chives and basil and 1/4
teaspoon salt

In a large skillet, saute the sausage pieces in the butter and oil.   Add the
diced mushrooms and saute for a minute longer. Add the onions and saute just
until translucent.  Add the peppers and saute until soft.  Add the cooked rice
and toss lightly until coated with flavors.  Toss in the cheese, raisins,
banana, pine nuts.  Toss the cooked eggs with the herbs and salt and add to the
rice, and toss.  Salt and pepper to taste.  Place the risotto on a large
platter and serve warm.  If you don't have all the ingredients, don't worry..
the sausage flavors all wonderfully :)  I use this as a base for just about any
broiled meats, such as Chicken Breast chunks/Sausage Chunks/ Tomato/Bacon
pieces, broiled on a skewer.
