Just came riding in on a Courvoisier, I mean a 737, in row
1 of course, and guess who was waiting at the airport for
me in this funny looking noisy car?

Yep, but they didn't hurt anyone, which was the good part.

I spent part of Sunday in the tower of a Category 9
airport - fascinating how the controllers keep a dozen
or more aircraft in their sector from running into each
other. The closer you get to the destination of course
the worse the consequences of going off track.

They like to keep as much separation between planes as
possible, but that's in two dimensions: in the third,
they really like the flying to be done right in line, to
the degree that when I go from Boston, say, to San Fran,
I can see the same topography from the same vantage point
(within a hundred lateral feet or so) pretty much every
time.

One of my favorite dishes is described below.

Dodging the construction seems to have worked.

Bean curd, roast pork, and rice
cat: comfort food, tofu, pork
servings: 1

oil
garlic
180 g Chinese red roast pork, not too lean
- sliced thin
120 g firm tofu
- in 4 cm x 4 cm x 1 cm slices
pork broth
soy sauce
cornstarch water
400 mL cooked rice
1 scallion, white and green, minced

Frizzle a clove of garlic in a bit of oil. Remove the
garlic. Raise the heat as high as possible and throw
in the roast pork; when it's heated through, add the
tofu and a bit of broth. Stir-cook until all is hot,
season with soy sauce, and thicken with cornstarch
water. Serve over rice, garnished with scallion.

Poor people make this same dish but use maybe a quarter
of the quantity of pork. One of the great things about
the USA is that you can get as much pork as you want for
not too much money.
