      Title: Almond Fudge Cake Mandelkolatårta

      Yield: 8 Servings
 
           Almond cake:
     10 oz Almond paste
  3 1/2 oz Room-tempered butter or
           Margarine
      3    Eggs
    2/3 c  Flour
  1 1/2 ts Baking powder
           Fudge sauce:
           Good 3/4 cup heavy cream
           Good 1/3 cup sugar
    1/2 ts Cocoa
           Decoration:
           Good 1/3 cup heavy cream
           Some cocoa
 
  Coarsely grate the almond paste and mix with the fat. Add the eggs,
  one by one, and stir to a fluffy mixture. Add flour mixed with baking
  powder. Pour the batter in a round cake pan with the bottom covered
  with greased baking paper. Also grease the sides of the pan. Bake at
  350F for about 40 minutes.
  
  For the fudge sauce, you mix cream, sugar and cocoa in a saucepan
  with a capacity of 8 cups. Boil to a thick sauce on VERY LOW HEAT for
  about 45 minutes. Stir gently. Pour the sauce over the cake.
  
  Decorate the cold cake with cream and sprinkle with cocoa.

      Title: Almond Kiwi Cream Cake Tårta Med Mandel Och Kiwi

      3    Eggs
    2/3 c  Sugar
  1 3/4 oz Ground almonds
      2    Grated bitter almonds
    2/3 c  Flour
      1 ts Baking powder
           Filling:
      7 oz Package frozen strawberries,
           Sliced
    1/3 c  Heavy cream
      1    Mashed kiwi
      1 tb Fresh lemon juice
           Decoration:
      1 c  Heavy cream
     10    Whole, nice-looking
           Strawberries
      2    Kiwis
  1 3/4 oz Toasted slivered almonds
 
  This very light and refreshing cake is rather common to make for
  graduations and Pentecost - and confirmations in the church. Exactly
  on this very day, it's very common for people to have their children
  confirmed, and the church bells can be heard all over town. On these
  occasions, we often choose to serve a not too lavish reception meal,
  more like a buffet-style one - more practical when you have many
  guests. Weather permitting, and if there is a garden, the meal is
  mostly served outside.
  
  I'll post the recipes for an entree and a main dish as well, but the
  cake is so delicious I wanted to start with that. Knowing me, you're
  not surprised, right? :-DD
  
  Heat the oven to 350F. Grease and flour a 9" round cake pan.
  Beat eggs and sugar until fluffy. Fold in the almonds mixed with
  bitter almonds, flour and baking powder. Just stir until the batter
  is blended. Pour in the dish and bake on a rack on the bottom of the
  oven for about 35 minutes. Let cool on a rack.
  
  Cut the cake in three layers. Barely thaw the strawberries. Beat the
  cream and mix with mashed kiwi and lemon juice. Put the cake together
  with strawberries on the first layer and cream-kiwi mixture on the
  second.
  
  Beat the cream and spread it over the top layer and also the sides of
  the cake. Sprinkle slivered almonds round the sides and decorate with
  strawberries and sliced kiwi. Keep in the fridge until serving.
