      Title: Easy Apple Cake Lattlagad Appelkaka

      Yield: 8 Servings
 
      4    Apples
           Butter or margarine
      3 tb Sugar
      3    Egg whites
      2 tb Creme fraiche/ sour cream
      4 tb Icing (confectioner's)
           Sugar
 
  Peel, core, and cut the apples in half. Put them on an oven-proof
  dish, cupped side up, drop over some fat and sprinkle with sugar.
  Bake the apples in 225°C/425°F for about 20 minutes or until tender.
  Remove from oven and let cool slightly.
  
  Beat the egg whites stiff and gently mix down crème fraîche/sour
  cream and 2 tbs icing sugar. Spread the mixture over the apples in
  the dish and sift with 2 tbs icing sugar.
  
  Put back in the oven and bake for another 10 minutes until the
  surface is golden. Serve instantly.
  
  The baked apples can be frozen, but don't spread the meringue on top
  until just before you put it in the oven to serve it. Storage time
  for the apples: About 5 months.

      Title: Emma's Cake Emmatårta

     10 oz Almond paste
      3    Eggs
    1/3 c  Sugar
           Butter or margarine
           All-purpose white flour or
           Dried breadcrumbs
           For the dish
     20    Strawberries
      1 bn Green grapes
      1 cn Mandarin wedges, drained
    3/4 c  Blueberries or blackberries
      4 ts Powdered gelatin
    1/3 c  Water
    1/4 c  Concentrated fruit or berry
           Drink *
 
  *e.g. elderberry if you can find it, otherwise some other taste
  
  Now it's Emma's turn to be celebrated on July 23. This cake is a
  little more elaborate than the others, but don't let it scare you
  from trying it out. It's so beautiful to look at - a true work of art
  ~ and soooo delicious!
  
  Coarsely grate the almond paste, put in a bowl and add the eggs. Stir
  and let stand for a few minutes. Add sugar and stir again, but only
  just enough to make the mixture smooth. Butter and breadcrumb a
  baking dish with removable edge, diameter good 9". Pour the mixture
  in the dish and bake at 350F for about 35 minutes or until nicely
  colored. It mustn't be dry but preferably a little sticky in the
  middle. Allow to cool. Remove the edge and put the cake on a serving
  platter covered with baking paper in 4 stripes.
  
  Rinse the strawberries and remove the knobs. Rinse the grapes, split
  them lengthwise, and remove the seeds. Drain the canned mandarins
  well and decorate the cake with fruits and berries.
  
  Put the powdered gelatin and 1 tbs water in a saucepan and let stand
  for about 5 minutes. Add concentrated fruit or berry drink and
  remaining water and heat to about 90F, so that the gelatin melts. Put
  in a cold place for 10 - 15 minutes until thick but still "runny".
  
  Drip the jelly over the fruit, so that it's all covered. Put the cake
  in a cold place. Drip more jelly over it, 1 - 2 times more. Leave the
  cake in a cold place until serving and remove the paper strips just
  before serving - they're there to make sure the plate won't get mushy
  and messy from the dripping jelly.
