      Title: Fudge Cake for Many People Kolatårta För Många
 Categories: Scandinavia, Cakes, Chocolate, Frosting
      Yield: 8 Servings
 
           Bottom layer
      8 oz Margarine or butter
  1 1/2 ts Baking powder
    3/4 c  Flour
      2 c  Oatmeal
    3/4 c  Sugar
      5 oz Good-quality dark chocolate
           Fudge creme:
    1/4 c  Sugar
    1/4 c  Molasses
    2/3 c  Cream
      1 tb Margarine or butter
           Filling:
  1 1/4 c  Heavy cream
           Chocolate frosting:
  1 3/4 oz Margarine or butter
  1 1/4 c  Powdered sugar
      5 tb Cocoa
      2 tb Cream
      1    Egg white
           Decoration:
           Fresh strawberries
 
  Heat the oven to 400F.
  
  Melt the fat for the bottom layer in a spatious saucepan and let cool
  slightly. Mix baking powder and flour and stir in oatmeal, sugar and
  flour mixture in the melted fat.
  
  Cover a baking plate, 12 x 16", with baking paper. Pour the batter on
  the plate and shape it to a rectangle, so that it covers the whole
  plate. Bake in the middle of the oven for 10 - 15 minutes, then cut
  the cake in the middle with a sharp knife while still warm, so that
  you have two layers. Let cool on a rack.
  
  Melt the chocolate over a waterbath or in the microwave and brush it
  over the cake so that one side is glazed.
  
  Mix all ingredients for the fudge creme in a saucepan and boil on low
  heat while stirring, about 20 minutes or until thickened. Spread the
  fudge creme on one of the layers, on the chocolate glazed side. This
  layer will form the bottom layer. Save some creme for decoration.
  Beat the cream and spread it on top of the bottom layer, then put on
  the other layer with the chocolate glazed side against the cream.
  
  Melt the fat for the frosting in a saucepan and remove from heat. Add
  powdered sugar, cocoa and cream and stir until cold. Beat the egg
  white to a stiff foam and fold this into the frosting. Spread the
  frosting over the cake (some of it can be piped in a nice pattern
  around the edges), then drizzle the remaining fudge creme over the
  cake and decorate with some fresh strawberries.

  3 1/2 oz Almonds
    1/4 c  Sugar
      2    Eggs
      4 tb Heavy cream
      2 tb Cornstarch
      6    Tart apples
 
  The recipe isn't from my own grandmother, but from a friend's grandma,
  Sara. I've eaten this apple cake in their kitchen (and also made it)
  many times, and now it's about time I share the recipe with all of
  you.
  
  Scald and peel the almonds, then grind it (you don't have to use a
  grinder, it gets finely chopped in the food processor) and mix with
  the sugar. Beat the eggs, add cream and cornstarch and stir well. Mix
  this with the almond mixture.
  
  Peel and cut the apples in wedges and put them tightly together in a
  greased oven-proof dish. Pour the batter over them and bake in the
  oven at 400F utnil nicely colored, about 25 minutes. Serve with
  whipped cream.
