      Title: Pierre White's Lemon Cake Pierre Whites Citrontårta

      Yield: 8 Servings
 
           Bottom layer
  1 3/4 c  Flour
    2/3 c  Powdered sugar
      4 oz Butter or margarine
      1    Egg
           Filling:
      6    Eggs
      1 c  Sugar
      3    Lemons
    3/4 c  Heavy cream
 
  Mix all ingredients for the bottom layer in a food processor. When the
  dough is smooth, wrap it up in plastic foil and put in the fridge for
  at least 1 hour.
  
  Heat the oven to 400F. Roll out the dough and dress a baking dish
  with high sides, good 10" in diameter. Bake for about 15 minutes and
  allow to cool.
  
  Beat eggs, powdered sugar and grated lemon peel for the filling,
  until the sugar has dissolved. Pour in the lemon juice and cream.
  
  Lower the oven temp to 300F and pour the filling over the bottom
  layer. Put back in the oven and bake for another 50 - 60 minutes. Let
  cool before serving.
  
  They don't give any suggestions for good stuff to serve with the cake
  ~ maybe they think it's just as good without any accompaniments. But
  I would choose some berries and maybe a little cream, if anything.

      5 oz Room-tempered butter
    3/4 c  Sugar
      3    Egg yolks
  1 3/4 c  Flour
  1 1/2 ts Baking powder
    2/3 c  Milk
           MERINGUE:
      3    Egg whites
    2/3 c  Sugar
    1/3 c  Toasted flaked almonds
           FILLING:
    3/4 c  Whipping cream
      2 ts Vanilla sugar
      7 oz Frozen or fresh raspberries
           Decoration:
  1 1/4 c  Whipping cream
           Toasted flaked almonds
           Some whole raspberries
      1    Kiwi
 
  Another cake from Hälsingland. The cake recipes come from a book I
  bought at a "garage sale" earlier today, and for some reason they've
  concentrated on cakes from the Swedish region of Hälsingland. :-D And
  I haven't a clue as to why it's called "Pinocchio Cake" - not at all
  
  Stir fat and sugar until fluffy. Add the egg yolks, one by one, and
  stir for a while between each. Mix flour and baking powder and add
  that together with the milk. Dress 2 baking dishes, diameter 9 - 10",
  with baking paper and divide the batter in the dishes.
  
  Beat the egg whites stiff and foamy. Fold in the sugar and divide the
  meringue on both the batter "layers". Sprinkle with flaked almonds.
  If you don't have two dishes as above, or if the oven is too small
  for two dishes at the same time, bake one cake at a time. Bake at
  350F for about 30 minutes or until the meringue is nicely colored and
  the cake is dry. Let cool.
  
  Beat the cream and flavor with vanilla sugar. Spread part of it on
  one of the cakes, sprinkle raspberries over the vanilla cream and put
  the other cake on top. Spread the remaining cream over the whole
  cake, sides and all, and decorate with almonds, cream, raspberries
  and sliced kiwi.
