      Title: Peaches Champagne
 Categories: Desserts, Fruit
      Yield: 12 Servings
 
      2 c  dry scuppernong white wine
           or any sweet; white wine
    3/4 c  sugar
      2    2"  cinnamon sticks
     12    freestone peaches
           peel of 2 oranges, cut into
           strips
      8 oz can  almond paste
           powdered sugar

  Combine wine, sugar, and cinnamon in a Dutch oven; simmer 5 min.
  Add peaches; cook over low heat 8 min or until fork tender. Cool
  peaches in liquid at least 20 min. Drain peaches, reserving
  liquid. Remove peel from peaches (peel should be easily removed
  with fingers); discard peel. Place peaches in a jar; add orange
  peel. Pour reserved liquid over peaches, and chill thoroughly.
  Shape almond paste into 3/4" balls; dust lightly with powdered
  sugar, and chill. Drain peaches, reserving liquid. Cut a small
  slit along crease of peach; remove pit. Place an almond ball in
  center of each peach.  Close peach and place back in jar; pour
  reserved liquid over peaches. Chill.

      Title: Peachy Ginger Pie
 Categories: Pies, Fruit
      Yield: 6 Servings
 
    1/4 c  plus 2 Tbsp, sugar, divided
    1/2 ts ground nutmeg, divided
      2 TB finely chopped candied
           ginger
  1 1/2 TB quick cooking tapioca
      5 c  peeled, sliced fresh
           peaches
      1 ts lemon juice
      2 TB butter
      2    crust 9-inch pie

  Preheat oven to 375 F. Line pie plate with bottom crust pastry.
  Combine 2 tablespoons sugar and 1/4 teaspoon nutmeg. Sprinkle on
  bottom of crust. In large bowl, combine 1/4 cup sugar, 1/4
  teaspoon nutmeg, ginger and tapioca. Add peaches and lemon juice.
  Toss to coat peaches with sugar mixture. Pour evenly into pie
  crust. Dot with butter. Cut remaining crust dough into strips.
  Place on top of peaches to form lattice top. Cover edge with foil.
  Bake for 20-25 minutes or until crust is golden brown and peaches
  are tender.
