 -> I like X-Country because I have a lot of flat country to cross.

 I dunno. Next time you get away to Salt Lake City in February, don't
 leave your X-C skis at home. When you stay right in town then you have
 your choice of the finest dinning in all of Salt Lake City right at your
 door steps. Places like Denny's and fancy places where you can even get
 an egg McMuffin for breakfast. After that get on the city buss after
 strapping your skis in the ski rack in front and ride to the last stop
 which is Alta, just the greatest powder snow skiing in all of North
 America. Strap on those X-C skis, slide down to the ticket booth and
 hop a rope up to the chairs where you can get to the very top of the
 Wastach Range, then start telmarking down to the bottom. You won't get
 much air, but you will have a great ride. And most important, if you
 make a bad turn and end up on the wrong side of a ridge in a bowl, you
 will be happy to have those climbing skis on your feet other than those
 downhill jobs. I did a two hour climb once to get out of one there.

 But if you want to get fancier you can get off the buss at the next to
 last stop and ski at SnowBird, now a vertical air guy couldn't be
 happier than being there. And if you have a lot of money in your wallet,
 when you get to the top just takes that trail over the top and out
 through the pines to end up in Park City where you can buy a drink with
 liquor in it and the same Egg McMuffin for three times the price.
 Trouble is there is no trail system to get you back over into Alta so
 you have to take a taxi back to Salt Lake City, or make friends with
 someone going that way.

 One year Colorado had little snow and out east nothing but rain, so I
 ended up in Utah.. Went back many times. Great skiing but lousy ambience.
 Best for that is Stow Vermont with best food of all and Quebec City for
 the most interesting people along with great food and decent Skiing at
 Mt St Anne.

 -> half way back down to town, then the pizza joint at the bottom. Whoa,
 -> that was fun times. My 24 year old son and I went there together.
 -> We had the greatest of times.
 ->
 HN> Now THAT sounds like a good visit!

 That was fun and if this wasn't a family board I could regal you with
 some tales of that trip where you would say No Way, with your kid
 along..  :)

 -> That's the name of it. My bike is sprung in the middle so the back
 -> wheel is always in contact with the ground in rough terrain. No
 -> spinning while peddling in rutted rough areas. That great but the seat
 -> comes up and whacks you in the rear at times. Those skinny little
 -> seats they put on bikes today make the impact unpleasant. So I bought
 -> a seat larger than the ones they used to put on bikes long ago, well
 -> padded and super comfortable. Set me back almost as much as I paid for
 -> the bike, but worth it. In bike shops, it's name is "Cloud Nine." :)
 ->
 HN> Hmmm, I'll have to look for one of those!

 You would not be unhappy if you spend any time sitting on a bike seat.
 I can't recommend one enough.

 -> Oh my I would love to do that Hap. How about while we are over there,
 -> we take a cruise down the Rhine through wine country on a barge with a
 -> fancy chef doing the meals.
 ->
 HN> ??What we need a chef for? (grin)

 They come with the cruise. I looked into it several years ago. There
 is also a two week bike trip through the Alps starting and ending in
 Switzerland for the folks who want to eat fancy food at many places in
 Italy, France and Germany. Great picture taking stuff. They provide the
 BMW bikes, all fuel and everything arranged for about two grand cheaper
 than the barge trip. Around $8,000 if memory serves me right.

 I like this stuff after playing out in the cold all day.
 Julia Child's way is still one of the best ways.

    * 1 1/2 cups green split peas
    * 1 large onion, peeled and chopped
    * 2 celery stalks, chopped
    * 1 large leek, chopped
    * 1 large clove of garlic, halved
    * 1 herb bouquet*
    * 1 or 2 well-rinsed ham hocks
    * Salt and Pepper
    * Optional garnish - small toasted croutons

*Herb Bouquet: Tie 3 cloves garlic, 4 allspice berries, 2 bay leaves,
1 teaspoon thyme, 8 sprigs parsley in washed cheesecloth.

1 Pick over the peas and remove any stones. Wash and drain peas.
Place in a 4 quart pan with the vegetables, herb bouquet, ham hocks
and 2 1/2 quarts of water. Bring to a simmer. Skim the scum off the
top of the soup for several minutes, until the scum ceases to rise.
Cover loosely and simmer about 1 1/2 hours, or until peas are tender,
stirring occasionally in case they stick to the bottom of the pan.

2 Remove bones, and herb bouquet from soup, discard. Either puree through
a vegetable mill, or puree in a food processor and then pass through a
sieve. Correct seasoning.

3 Reheat, taste again for seasoning. Ladle into warm bowls and garnish
with croutons and or sauteed ham.

I use Spam, love that stuff... Something else my low salt has taken away.

Makes 2 quarts. Serves 6.
