Truth, but very few industries operate incentive-free these
days, much as many of us would like to believe in a pure free
market. I maintain that were we in one, an unacceptable
percentage of the population would be out on the street. It
may be pork, but it may also be that we need pork.

There are few if any businesses that aren't government aided
in some way. And the excuse given for the auto companies
is kind of bogus, oh, they've operated under a bad business
model. I don't think any industry has been more studied by
business school professors, who keep making suggestions,
which keep getting implemented, to what end?

Bahamian Lobster and Bacon Ragout
Cat: shellfish, bacon, main
Makes: 6 servings

3 1-lb live lobsters
4 thick sl streaky bacon, diced
1 md onion, chopped
1 celery rib, chopped
1/2 md green bell pepper, seeded and chopped
1/4 c tomato paste
4 lg ripe tomatoes, peeled, seeded, and diced
- with juices included
1/2 ts fresh thyme leaves
1 sm jalapeno pepper, finely chopped
Salt and freshly ground black pepper to taste
1 Tb water
Boiled long-grain white rice

In a large stockpot, bring about 8" of water to a rolling
boil and plunge the lobsters head-first into the water.
Reduce the heat to low, cover, and steam the lobsters
about 7 min. Remove from the water with tongs, crack the
shells with a mallet or hammer, and, when cool enough to
handle, shred the lobster meat and set aside.

In a large skillet, fry the bacon over moderate heat just
until it renders most of its fat; add the onion, celery,
and bell pepper, and stir about 5 min. Add the lobster meat,
tomato paste, tomatoes, thyme, jalapeno, and salt and pepper
and stir until the mixture is soft, 8 to 10 min. Add the
water and stir about 3 min longer.

Serve the ragout hot over mounds of rice
