Hi Michael,

ML> Sous cheffing and prep cooking are both fine in their place.
RH> Yes, and very much appreciated by the head chef.

ML> I find that in many social situations, people are unwilling to
ML> do so, nonetheless. I have spent numerous parties in the kitchen,
ML> chatting away while making schnitzels and radish roses and mashed
ML> potatoes and rice and sauteed foie gras and crepes Suzette and
ML> stuff, with the rest of the people, perfectly okay people, not
ML> lifting a finger to help me. Whereas if I encounter a cook scene
ML> I will always ask what I can do.

Tis a pity more people won't pitch in to help a host. I'd rather be
doing something than standing around so I'll pitch in and help if I can.
Takes a bit off the host's back and enables him (her) to enjoy the
gathering. I've not done things like crepes or foie gras but making
punch, a veggie tray or things like that are helpful as well. Could be
some people don't want to get their clothes dirty--an apron, even an
improvised one of a towel, will solve that issue.

ML> Yesterday I taught someone how to make Welsh rabbit and found
ML> myself afterward discussing the making with a rapt audience,
ML> and gradually it went "Veronique did this" to "I showed Veronique
ML> to do this" to "I did this" - the last being the truth.
RH> Taking credit where credit was due. Did she start making it, then ask
 RH> for help?

ML> Nicholas, having retired from Chairman of the Board of
 ML> collagenewmusic.org, is now President of hmaboston.org
ML> and assigned me to be the tutor cook for the foot of the
ML> head table (Judith Strang took honors as cook for the
ML> head of the head table, which leads me to believe that she
ML> (pushy young person that she is) may be the next President),

Sounds like an interesting group. Nicholas is going from one major
musical group to another one?

ML> where Veronique postsided and was bemoaning the fact that
ML> she was at sea in this august company, and her cooking chops
ML> had suddenly abandoned her. As a result, I did all the cooking
ML> aside from a stir or two. I think that Nicholas was perhaps

I can understand a brain cramp or two but a complete melt down sounds
sort of suspicious.

ML> not only paying homage to my superior culinary skills but

Could he hers are just as good, if she's not under that kind of
pressure.

ML> also trying to set up a situation where some other kind of
ML> fires might be set a-kindling (they weren't).

Well, he thought it might. But, being neither of the parties involved,
he just misjudged. Someone else, and it might have sparked something, or
not.

ML> I think curry powder is a good idea, but then they'd
ML> be more Madras beerocks than Fresno ones.
RH> Agreed, what sort of taste does Fresno have, anyway? (G)

ML> Really bland, a la Latter-Day-Saint cooking, either that or
ML> really spicy, a la Mexicana.

Interesting contrast there.

 ML> Dirty rice
ML> cat: Japanese, Cajun, main, slightly strange
 ML> servings: 15 to 20
RH> I think the last category suits this one; thought it might have been
RH> an xxCarol at first but scrolled down to see that it wasn't.

ML> Having met xxCarol I can attest to her being slightly strange
ML> (in a good sense), but to my knowledge, her experience with
ML> cooking has been for a party of 3, aside from her hanging out
ML> with the Filipino shipboard cooks, who cook for several hundred.

I think the most I've cooked for is about 50 and did something strange.
The menu was chili; I made mine, with the usual beans. Got requests for
the recipe..............................................what was strange
was this was a group of folks from Texas. Most of the time my cooking
had been from 2 (Steve and me) to 7 (when I was at home).

ML> Title: Pommes Caramel (caramel Apples)
ML> Categories: Desserts, French can, Benoit
 ML> Servings: 1

 ML> 1/3 c Butter
 ML> 1 c Sugar; Brown pref.
 ML> 1 ts Vanilla
 ML> 6 Apples

Looks good. A baked apple would be good on a cold, wet, windy day like
today as well.

Catch you later,
Ruth
