To be fair to them, they were listed as being hard cider wines.  The
cider mill also had some unfiltered one-year old hard cider.  In hind
sight, I wish I had brought a bottle of that to you instead of one of
the wines.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Four Cheese Soup With Lobster And Fresh Herbs
 Categories: Soup, Cheese, Lobster, Kostick
      Yield: 4 servings
 
      2 tb Unsalted butter
      4    Shallots, finely chopped
      1 sm Red bell pepper, finely
           -chopped
      1 c  Cooked lobster meat
    1/4 c  Dry white wine
    1/4 c  Chopped fresh basil
      2 tb Chopped fresh rosemary
      2 tb Chopped fresh thyme
    1/2 ts Sea salt
    1/2 ts White pepper
      4 c  Fish or vegetable stock
      2 c  Table cream
    1/4 c  Grated gruyere cheese
    1/4 c  Shredded cheddar cheese
    1/4 c  Grated Parmesan cheese
    1/4 c  Shredded mozzarella cheese
    1/4 c  Finely chopped fresh
           -parsley
 
  In a large soup pot, melt the butter.  Gently saute the shallots and
  red pepper for 2 minutes.  Add the lobster, white wine, basil,
  rosemary, thyme, salt and white pepper.  Simmer, stirring, for 4
  minutes, allowing the alchol to burn off.  Add the stock and simmer
  10 minutes.  Add the cream and simmer gently until heated through.
  Stir in the cheese until melted.  Serve immediately with the parsely.
