Small point - "Horses for courses."  Around Joan's neck of the woods
there are no hills.  All the roads she rides are horizontal, and one
gear is usually quite adequate.  The 3-speed is good for dealing with
strong winds, for and against.  Having ridden around there on her
number two bike, which only has the one gear operable, I had no trouble
except where the bike track dips under a road bridge, but a burst of
high speed peddling down one side was enough to get me up the other.
The only hazards on that path were the flocks of Canuk geese which were
reluctant to move, and looked belligerently at us.

I have a sister-in-law who lives in Rosskilde, out from Copenhagen.
She has one bike she rides to the railway station, catches the train to
Copenhagen, them picks up her second bike from the bike park there, to
ride the last part to work.  After having had a couple of good bikes
stolen from the park, she got a rusty old wreck, which no one would
want to take.  That one has lasted.  There are no hills in Copenhagen,
and as far as I could see, *everyone* there has a bike.

MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Cream Cheese Danish
 Categories: Newsgroups, 28nov2001
      Yield: 24 servings
 
    3/4 c  Milk ;scalded
    1/3 c  Sugar
      2 ts Salt
    1/3 c  Butter
      2 pk Yeast
    1/4 c  Lukewarm water
    1/2 ts Almond extract
      3    Eggs ;beaten
  4 1/2 c  Flour
      1 c  Butter
           Apple ;Cherry, or Blueberry
           Pie Filling ;canned
           Or cream cheese filling
           [follows]
      1 c  Sugar
      2 tb Cinnamon ;or less if
           Desired
 
  Combine scalded milk, sugar, salt, and butter and cool to lukewarm.
  In a large bowl dissolve yeast and lukewarm water. Stir in almond
  extract and beaten eggs. Add lukewarm mixture to yeast and then add
  egg mixture. Gradually add flour. Place dough in a greased 9 x 13"
  pan. Chill in refrigerator, covered,  for 1 to 2 hours.  Turn chilled
  dough onto a floured board. Roll to 12 x 16.  Spread 1/3 cup butter
  over 2/3 of dough. Fold unspread portion over 1/2 of the remaining
  dough. Fold
  
  over remaining third.  Repeat this procedure twice more rolling to 12
  x 16"es each time. Return dough to refrigerator and chill ocernight.
  When ready to bake: Divide dough in half. Roll to 14 x 9 - inches.
  Cut into strips,  with a pastry cutter, 14"x 3/4". Twist and form
  each strip into a roll or circle, building up sides, placing on a
  greased cookie sheet. Fill shells with apple, cherry, or blueberry
  filling. Combine sugar and cinnamon and sprinkle over pastries. Cover
  and let rise in warm place, until doubled.  bake @ 375-degrees for 12
  minutes.   Makes 24 to 30.
  
  This take 2 days to make. This is definitely worth the time! ! !
  :Here is a recipe for Danish, that I have used for years, it is from a
  :Pepperidge Farm recipe book, from the 50's or 60's
