Ärende: POOREST MEAL 90126
===========================
-=> Quoting Jim Weller to Glen Jamieson <=-

ML> I'd say that the poorest and most desolate places
ML> I've broken bread in have been rural towns in Ireland and West
 ML> Virginia

GJ> That comment set me reflecting on what would have been the poorest
GJ> meal I had ever eaten.... a small spoonful of chicken curry on
GJ> some rice, served on a banana leaf, East Java

JW> Poor as in cheap, not lousy.

Yes, memorable for that reason, not for being plain bad, although I
have had more than enough of the latter, which I tend to forget.

 JW> That's a great theme for a new thread.

JW> One that springs to mind.... in 1962 when I was in grade 9 I boarded
JW> with Dutch Farmer Bill's parents for a semester while the rest of

JW> of making good meals out of nothing but potatoes, turnips, cabbage
JW> and a microscopic amount of pork. I remember incredible homemade rye
JW> bread (they grew and milled their own grain), amazing croquettes
JW> made from leftovers and fried in lard, sausages and apples with
JW> kraut glistening with sausage grease, and tiny meatballs swimming in
JW> oceans of gravy on a plate filled with mashed potatoes. I still
JW> don't know how she could generate so much tasty gravy to stretch
JW> meals with when she had so little meat to work with. They never had
JW> the loins or hams just the front shoulders, head meat, organ meats,
JW> hocks and trimmings as the loins and hams were sold. But I ate very
JW> well indeed all the same those three months.

It probably was better that you didn't know everything that went into
the croquettes and gravy, or it may have put you off the food.
Teenagers are often picky about what they are eating. The use of herbs
and spices - easily grown in small spaces - or other strong flavourings
is one of the secrets of getting the most out of small amounts of
protein. In the Philippines, the rock bottom food of the poor (anak
pawis - literally "sweat children" - is a little pungent bagoong
(fermented fish, crab or prawn paste) mixed with cooked rice.

MMMMM----- Recipe via Meal-Master (tm) v8.05

Title: BITTER MELON & GREEN ONION SALAD - ENSALADANG
 Categories: Sides, Salads, Filipino, Asia-se
      Yield: 4 servings

      2 tb Salt
      4 c Bitter melon
      1 c Spring onions
    1/4 c Bagoong
      8 md Tomatoes- plum

Seed & julienne the bitter melon, finely slice the onions & tomatoes.

Sprinkle the salt over the bitter melon & toss to coat the melon
evenly. Place in a colander & drain for 20 minutes. Rinse thoroughly
& drain again. Salt removes some of the bitterness.

Toss the melon with the onions & bagoong. Distribute amongst 4 iced
salad bowls, placing a mounded scoop in the centre of each bowl.
Divide the tomato slices amongst the bowls, arranging the slices
  around the mounded melon.

If bagoong is not available substitute 2tb soy sauce & 2tb lemon
  juice.
