Sure is :) tonight for a change of pace, I made chicken parmigiana. We're
temporarily out of steak (oh no! (grin)).

===chicken parmigiana===
4 chicken breast halves, about a pound 1/2 cup Italian bread crumbs
1 cup marinara sauce
about 1/4 cup parmigiana cheese
about 1/4 cup mozzarella
salt, pepper
*1 Tablespoon olive oil
*1 Tablespoon butter
or 2 Tablespoons olive oil and skip the butter (my preference)

Preheat the oven to 350F.

Place the breast halves between two sheets of plastic wrap and flatten gently
with the flat side of large heavy knife.  When flattened somewhat, salt and
pepper both sides. Dip the breasts in the bread crumbs pressing the bread
crumbs into the breasts on both sides. Saute the breasts for 4 minutes in about
2 tablespoons of olive oil (see above about skipping butter here).

Pour about 1/2 cup of the sauce into a 12X13" roasting pan or brownie pan and
place the breaded breasts on top of the sauce.  Cover each one evenly with the
1/2 of the parmigiana cheese.  Spoon the rest of the sauce over the cheese.
Sprinkle the mozarella cheese over the sauce and add the rest of the
parmigiana.  Place the baking pan in the oven covered with tin foil and bake
for 25minutes at 350F.

I definately ate too much tonight, ignoring what I knew would be trouble with
the cheese Lol

which shouldn't be green, but are because they were exposed to sunlight early?

Oh I understand that one :) My SIL only well done steak.. (and well done lamb,
etc.) I just can't make myself do it to steak or roasts (I tried, I swear
hahaha) - Best I can do for him is make it 'warmed over' as I like it, and zap
his in the microwave (secretly, they refuse to use a microwave because of
"killer-rays" hehehe).  Well, I feel justified because they know I have a
microwave and use it a bit to melt butter and such.. so... (evil MIL I guess)

Never saw that one.. guess it's a black pepper sauce?
