Canadian food laws are much stricter than American ones. I do not
trust your USDA which seems to be open to pressure from lobbyists;
the scientists are not in control, independent of political
influence.

In Canada, by law, the chicken and its food would have had to be
free of all synthetic chemical inputs (e.g. fertilizer, pesticides,
antibiotics, food additives, etc) its entire life. The food would
have to be grown in soil that has been chemical free for three
years.

But the definition has been watered down.

In the old days organic farmers held certain principles and lived by
them; they sold directly to consumers who could verify all claims.
Now, certification is required. In order to certify a farm, the
farmer must pay fees and do a horrendous amount of paper work, which
increases with each new crop grown, to satisfy the USDA that he is
complying. The detailed record-keeping formats from planting to
harvest are designed for large scale operations and single crop
harvests.

Some of the staunchest opponents of chemical based farming and
factory farming practices also oppose formal certification. They see
it as a way to drive small independent organic farmers out of
business and to undermine the quality of organic food.

Your DoA allows all kinds of synthetic ingredients in foods labeled
organic. As it stands a food containing a minimum of 70% organic
ingredients can be labelled "made with organic ingredients". In
2007 the USDA certified Anheuser-Busch's Wild Hop Lager organic
even though it uses hops grown with chemical fertilizers and sprayed
with pesticides. But hops are way less than 30% of the final
product. The water content was labeled organic!

      Title: Grilled Miso Marinated Scallops with Hijiki Salad
 Categories: Scallops, Salads, Japanese, American
      Yield: 4 Servings
 
    1/2 c  Sake
    1/4 c  Canola oil
    1/2 c  Light miso paste
      2 tb Minced ginger
      2 tb Sugar
      1 ts Coarse ground black pepper
     12 lg Scallops
 
  Mix all marinade ingredients together and marinate scallops
  covered and refrigerated for 4 to 6 hours.  Large scallops can
  marinated overnight as well.  On a hot grill, mark the scallops on
  both sides. Should be served medium to medium rare.  Serve 3
  scallops on top of a small mound of hijiki salad.
