I was on the subway recently, and this guy was, er, boppin'
to the music, which was about as loud as I could tolerate ...
even though he was wearing headphones, and I was 5 seats down.
Someone is going to pay big for this guy's health care thirty
years from now, when I'm long dead and gone.

But that's almost the opposite of bop. Though as you see
I used it in your sense up above there.

Snake is a little more fibrous than chicken but has (in my
experience) a kind of neutral flavor. Alligator and frog
taste like fishy chicken, but I like frog better.

Well, that's age at onset, not incubation period. I'd figure
you were probably safe, along that line anyhow.

Yes. I can guess why. Back in the good old days all peppers
had spicy insides. Get a copy of Joy of Cooking that's older
than about 50 or 60 years and read the writeup on peppers.
Then various breeds were bred to minimize that characteristic,
and various others to maximize it. But the tolerance of the
public for mild heat has increased, so growers aren't taking
as much trouble to keep the line mild-pure.


THAI ICE CREAM
cat: Thai, dessert, dairy-free
yield: 1 batch

2 Tb shredded coconut
2 c coconut milk
1 c water
4 eggs
1 ts vanilla or rosewater (optional)
1 pn salt

Sprigs of mint for garnish

Stir fry the coconut until golden (optionally use a few pieces of fresh
corn.Thais often flavor ice cream with things considered unusual to
western tastes).

Heat the coconut milk and water over medium heat, stirring continuously
for a couple of min.DO NOT ALLOW TO BOIL.

In a bowl beat two eggs plus two yolks then add the other ingredients
and whisk gently.

Transfer the mixture to a double boiler over gently boiling water and
slowly blend in the hot coconut milk, stirring until the mixture
thickens, to form a continuous slightly sticky coat on the back of a
spoon lifted from the mixture.

Remove from the heat and allow to cool; then transfer to a metal ice
cream tray or similar container and place in the coldest part of the
freezer for one hour.

Remove to a food processor and beat slowly until smooth (this
incorporates some air into the mixture and prevents it becoming too
hard), then return to the freezer and complete the freezing process.
