I have my doubts. For one thing, the parts of the pig that we
now consider lower than the loin and ham were probably just as
well esteemed. The trade in fresh pork was nil, but that of salt
pork was high. Much of the pig was salted, including and especially,
if you think about it, the hams and bacon. Why are hams and bacon
and picnics not called Boston butt? I think Chris Schlesinger made
this metonymic etymology up.

It's porkolatry to the extreme if you figure that the pork board
is the arbiter of dictionary knowledge.

I went to my arbiter, the OED, which is rather silent on the
subject, though it appears that the most relevant sense would
be that of "thick end"; interestingly, it also indicates that
the term as applied to horses and cattle is used to mean the
rump or buttock.

McDonald's Hamburger Seasoning
cat: tastealike
servings: a lot

4 Tb salt
2 Tb Accent< (MSG)
1 ts ground black pepper
1/4 ts onion powder

Use THIS seasoning on ALL McDonald's hamburgers.

Mix all ingredients well. Use in a spice shaker with big enough
holes for the pepper to flow.

This seasoning is used liberally on all McDonald's hamburgers
during the COOKING process.
