I'm thinking that people are so used to trading up vehicles
for newer and better ones that the market for "gently used"
cars may boom, because people might be able to justify buying
a fresh nice used car when they are tired of their old one.
It doesn't satisfy that new car urge, but it's better than
nothing. The IFF, or whoever is making new car smell these
days, should make out like a bandit.

At the TSA checkpoint the other day.

TSA: How ya doin'.
me: OK, how's about you?
TSA: Aah, could be worse.

Catfish po-boy with Cajun mayonnaise
cat: sandwich, fish
servings: 4

1/2 c mayo
1 garlic clove, minced fine
2 ts Cajun seasoning
1 c flour
1/2 c yellow cornmeal
1/2 c white cornmeal
s, p
2 eggs, beaten
1/3 c milk
4 skinless catfish fillets, 5 oz ea
oil for frying
4 sub rolls, split
lettuce leaves
tomato slices

Combine mayo, garlic, and seasoning. Set aside.

Put 3/4 c flour into a shallow bowl. Combine
1/4 c flours and the cornmeals into another shallow
bowl. Season. Beat eggs with milk in a third bowl.

Coat the fish, one at a time, in flour, shaking off
excess. Dip into egg and then coat completely with
cornmeal mixture. Set on waxed paper and refrigerate
until coating is dry, 1 hr.

Pan-fry fish in oil until done, about 5-6 min. Drain.

Spread 1 heaping Tb Cajun mayo on the bottom half of
each roll. Arrange lettuce, tomato, and fish over.
Cover with top half of rolls. Serve with more Cajun
mayo if desired.
