Which reminds me... since my first winter in Cold Lake, Alberta back
in 1981 I have generally held a party on March 21, the equinox, to
celebrate the first day of spring with a Hawaiian theme. We were
still snow bound but we broke out the BBQ, grilled stuff, wore Aloha
shirts and drank Mai Tais. The girls were encouraged to wear
bikinis. Sadly we haven't done that here in recent years; I must be
getting old.

Well it's on June 24th, celebrated mainly in Quebec, just after the
summer solstice and National Aboriginal Day (NWT) on June 21 and
before Canada Day (the rest of the country) on July 1. There's no
set traditional dishes but a BBQ is usually involved given the time of
year. In the old days when the holiday was religious, not secular,
there would be priest blessed bread as a centre piece of the table
in the shape of a star or a heart.

Now if you are an Aboriginal, working for the government in Ottawa
but living across the bridge in Hull, Quebec you can score all three
paid holidays!

More low fat healthy chicken:

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: W W Creole Poached Chicken
 Categories: Chicken, Low-cal, Cajun
      Yield: 4 Servings
 
      2 ts Olive oil
      2    Onions, chopped
      1    Green bell pepper, seeded,
           -chopped
      1    Stalk celery, chopped
    1/2    Carrot, chopped
     14 oz cn Stewed tomatoes
    1/2 c  Low sodium chicken broth
      2 tb Chopped parsley
      1 ts Ground thyme
    1/4 ts Salt
    1/8 ts Cayenne pepper
      4    4-ounce Skinless boneless
           -chicken Breasts
 
  In a large nonstick skillet, heat the oil. Saute the onions, bell
  pepper, celery and carrot until tender, 4 - 5 minutes. Stir in
  tomatoes, broth, parsley, thyme, salt and cayenne; ad the chicken
  and bring to a boil. Reduce the heat and poach, partially covered,
  until chicken is cooked through, 8 - 10 minutes. With a slotted
  spoon, transfer the chicken to a platter.  Simmer the sauce,
  uncovered, until reduced by half, 4 - 5 minutes.  Spoon  the sauce
  over the chicken.

  Cholesterol: 49 mg Sodium:    541 mg Carbohydrate: 16 g Dietary
