Roslind still hasn't forgiving me for grinding chile peppers in her
coffee mill 5 years ago. We now have two coffee grinders, one each.
(I really thought I had cleaned it thoroughly!)

One would be wise to pass on imports from Vietnam and China but the
Philippines, Korea, Indonesia and Malaysia are pretty safe and Thai
and Japanese goods are safer than domestic North American stuff!

     Title: Korean Glass Noodles - Jap Chae

  Servings: 4

    1/2 lb dried Korean sweet potato
           noodles
    3/4    onion, thinly sliced
      2    carrots, julienned
      2    cloves garlic, minced
      3    scallions, cut into 1â€
           lengths
    1/2 c  mushrooms, thinly sliced
           (shitake, wood ear)*
    1/2 lb spinach, washed well
      2 T  soy sauce
      2 ts sugar
  2 1/2 ts sesame oil
      1 T  sesame seeds
           Cooking oil

*rehydrate your mushrooms if you are using dried

In large pot, boil water – when water is boiling, add noodles and
cook for 5 minutes. Check for doneness near the 5 minute mark -
noodle should be soft but still firm. Drain and rinse with cold
water. Toss with 1 tsp of the sesame oil. Use kitchen shears to cut
noodles into shorter pieces. Set aside. 

In bowl, mix soy sauce & sugar together. Set aside.

In a wok for frying pan, heat 1 T cooking oil until hot. Fry onions
and carrots, until soft, about 1 minute. Add garlic, scallions and
mushrooms, fry 30 seconds. Then add spinach, noodles, soy sauce,
sugar. Fry 2-3 minutes until noodles are cooked through. Turn off
heat, toss with sesame seeds and remaining 1 1/2 tsp of sesame oil.
