I'm glad you asked.  :)

The heart of the coconut palm is the part of the growing top of the
trunk from which all the fronds develop.  The lowest part, above the
palm trunk, is firm, creamy and rather like a bamboo shoot.  Above
that, the immature fronds begin to form.

My preference is to slice the lower part and gently fry in a little
butter.  It can be eaten by itself, or as a vegetable with fish.  The
upper part, which can be pulled apart with the fingers, is more suited
to be part of a salad.

As you are no doubt aware, to obtain the heart of palm (otherwise
known as "millionaire's salad"), the palm tree must die.  A whole
tree, to produce 1 or 2 kg of that delicacy!  Sometimes, however,
palms have to be cleared to make room for buildings or airfields,
which is when all the locals gather with their bush knives to cut out
the edible heart (and any young coconuts still attached to the tree).
When living in PNG, I was in a position where I could obtain such rare
food items and experiment with them.

If you want to try something a bit more complicated, there is this:

      Title: Ensalata Millionarjo - Millionaire's Palm Heart Salad
 Categories: <none>
      Yield: 4 servings
 
    450 g  Palm hearts; prepared, chop
           -coarse
    110 g  Small mushrooms;
           -clean/slice
      4    Black olives; stone/halve
      4    Olives- green; stone/halve
      1    Capsicums- green; seed/in
           -thin strips
      1 tb Chives; chop
      1 ts Parsley; chop
      2 md Potatoes; cook/cool/dice
    225 g  Prawns; shelled
    110 g  Tuna; canned, broken small
           -; Dressing
    175 ml Mayonnaise
      2 tb Lime juice
      2 tb Pickled chilli vinegar
      1 tb Olive oil
    1/4 ts Salt
    1/2 ts Ground black pepper
      1 ts Paprika
    1/2 ts Prepared mustard
 
  Prepare dressing by beating mayonnaise, mustard, and paprika. Beat in
  salt and pepper, lime juice, oil and vinegar. Pour dressing over salad
  ingredients in a large bowl and toss well.
