I know.. it's sick, isn't it.. living right next to that ramshackle old hotel
is the cause.. it's 'historic' but no doubt in pretty bad shape and not kept up
well.... I guess just country living.. anyway, we have the company put out rat
bait traps around the house, and yes, it did fit their symptoms I thought.

I know how it works .. :( Nasty stuff..

The fellow I spoke to said nothing they use would hurt them.. but I don't know.
It _can't_ be good for them.  I know what the stuff does to the beasts it's
meant for.. Anyway, it is enough for me to hold off getting another kitty for a
bit until I feel like it's safe around here.  I want to watch these guys more
closely for the next couple of months when they come and service the bait
traps.  Keep a close watch on how they work if you know what I mean.

Yeah.. Well, Matt and Alana are off this weekend looking for an apartment in
the Baltimore area.. hehe.. I think they are now both getting very excited
about all this :) It's good for them though :)

I see you've been making some further plans for the picnic, that's great :)
Wish we could but things are going more crazy here.. :(

But we are making more progress on the bathroom for Mom  but not much else
sadly enough as far as the picnic goes for us this year.. .   Nice shower going
in for Mom and really nice  sink vanity.. I told her about them and she said,
"Oh I might just decide to stay there for good :)" So I was encouraged about
that at least (g).

I made this last night from one of my moosewood cookbooks.. it's a lemon tart
served on almost a cookie crust.. I changed the recipe a bit to put some lemon
flavor in the "cookie" crust and it was even better (grin).

==Lemon Tart===
Tart Crust
 7 Tablespoons butter
 1 1/3 cups all-purpose flour
 pinch of salt
 1/4 cup sugar
 1/4 teaspoon vanilla extract
[optional: 1/2 tsp. lemon zest]
 3-4 tablespoons ice water

Filling
 Juice of 4 lemons
 5 tablespoons butter
 1/2 cup sugar
 4 eggs, beaten
 1/4 teaspoon vanilla extract

For the crust, cut the butter in small pieces and work into the flour with a
pastry cutter, two knives or your fingertips.  Mix in th e salt, vanilla, and
sugar and then just enough ice water to bind. Press the dough with your
fingertips into a 9 or 10 inch tart pan.  Chill the crust for an hour or over
night.  Preheat the oven to 425F.  Line the chilled crust with waxed paper fill
dried beans or rice to preven the crust from buckling, and bake at 425F for
15-20 minutes.  Carefully remove beans and wax paper. Reduce the heat to 350F
Mix together the juice of 4 lemons the butter and the sugar and heat until the
butter melts and the mixture is warm.  Pour the beaten eggs slowly into this
mixture in a steady stream, whisking constantly.  Continue to stir on low heat
until the mixture thickens into a custard. Stir in the vanilla.  Pour into the
baked crust and bake for 35 to 50 minutes or until the custard sets and top
becomes golden.  Serve chilled.  Garnish with thinly sliced rounds of lemon.
