I just thought of a neat Ph.D. project - take and culture
swabs of musical instruments and correlate them with the
illnesses that musicians get. I bet that the string players
who sit right in front of the woodwind section get more
colds than the woodwind players get!

Oh, I didn't have time for lunch or dinner yesterday and ended
up going out with some musicians after my rehearsal - had 5
slices of pizza at 10 pm, having forgotten my pills. Held it
until I got home an hour and half later. Speaking of crud.
The effects were surprisingly mild, and after one substantial
explosion, mostly gaseous, all was well.

 We went to Red Robin the other night; my grilled

Mayo at all is horrid, unless it's made by competent hands
and not those Hellmann's/Best Foods or Kraft poisoners.

One of the things that makes me exceedingly leery of Red Robin
is the unlimited potato thing. Those of us who go to burger
places for protein do not cotton to subsidizing the starch
hunger of football players and teenage boys.

Papeton d'aubergines
cat: vegetables
servings: 4

5 medium eggplant
2 garlic cloves
5 eggs
5 Tb milk
2 Tb flour
5 Tb olive oil
h - for the sauce
1 kg very ripe tomatoes
2 onions
2 Tb olive oil
s, p
1 bouquet garni
1 bouquet of basil
2 Tb tomato paste

Peel and dice the eggplant; salt and let drain
for 1 hr.

Oven at 400F (210C).

Peel the garlic and remove any green sprouting bits.

Dry the eggplant, pressing them between paper towels.
Saute them in hot oil for 12 min, stirring occasionally.

Sprinkle the flour on and mix well. Combine the
eggplant, garlic, and milk; puree in a blender,
adding the eggs one by one. Correct seasoning.

Butter a 22 cm baking dish made out of glass or
earthenware. Pour in the eggplant mixture; put dish
into a water bath and bake in the oven for 75 min.

Meanswhile, make the sauce: Peel the tomatoes; halve
them and then squeeze them to remove seeds and juice.
Cut the flesh into small dice.

Peel and mince the onions; saute them in oil briefly.
Add the tomatoes and the bouquet garni. Season and let
simmer 20 min, covered. Thicken with the tomato paste
and correct seasoning.

Wash, dry, and pluck the basil leaves.

About the time the eggplant are cooked, remove the
bouquet garni from the sauce; return the sauce to
low heat.

Chop the basil, reserving a few leaves for garnish,
and add the rest to the sauce, off heat.

Slice the papeton and distribute the slices onto
serving plates, surrounded by and topped with a bit
of sauce. Decorate with the whole basil leaves and
serve, passing the rest of the sauce separately.
