And I suppose the customers were aware of that, and accordingly tipped
extra.  I wonder if the menu prices were lower than elsewhere, as
result of the restaurant getting part of its income from the waiters?

That would come under the heading of exploitation, but I suppose if the
kitchen staff were illegals, management might be able to get away with
it, at least for a while.

According to my reading of Grolier, "America" is used for either North
and South, or both together.  Cristoforo actually arrived at San
Salvador in 1492, and didn't reach the mainland of S America until
1498.  He never reached North America.  Amerigo Vespucci explored and
mapped much of South America, and his name was used by the German
cartographer, Martin Waldseemuller for his first maps of the continent
in 1507.

All fascinating stuff.  The name of an Italian working for Spain, first
used by a German for a land which Columbus thought was China.

Really, to be fair, your country should be known by its original
11th Century, European-bestowed name, "Vinland", or by whatever name
the original inhabitants used for it ("Home"?).

      Title: Crocodile Schnitzels
 Categories: Crocodile, Australian, Reptile, Aboriginal
      Yield: 4 Servings
 
    250 g  Crocodile Fillets sliced
           Thinly
    1/2 c  Minced Walnuts
      1 c  Breadcrumbs
      1 c  Flour
      1 c  Milk
      1    Egg
 
  Dust with flour. Dip in egg wash (one egg beaten with 1 cup milk).
  Blend walnuts and breadcrumbs and coat crocodile with this mixture.
  Fry in preheated mixture of oil and butter. Serve with Tropical Fruit
  Sauce.
