Ärende: A tale of two breads
============================
I made two quickbreads yesterday instead of my usual large batch of
yeasted bread.

The first was:

MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Banana-Chocolate Tea Bread
 Categories: Quickbreads, Tnt, Jw, Nuts, Chocolate
      Yield: 2 Loaves
 
    1/2 c  Butter; softened
      1 c  Sugar
      2    Eggs
  1 1/2 c  All-purpose flour
      2 tb Cocoa
      1 ts Baking soda
      1 ts Salt
    1/2 ts Cinnamon
      1 ts Vanilla extract
      1 c  Banana; mashed
    1/2 c  Sour cream
    1/2 c  Walnuts; chopped
    1/3 c  Miniature chocolate chips;
           Semisweet
 
  Cream butter; gradually add sugar, beating until light and fluffy. Add
  eggs, one at a time, beating well after each addition.
  
  Combine flour, cocoa, soda, salt, and cinnamon; sift together. Stir
  flour mixture into egg mixture, blending well; add vanilla. Stir in
  banana, sour cream, walnuts, and chocolate morsels.
  
  Spoon batter into two greased and floured 7-1/2 x 3 x 2-inch
  loafpans. Bake at 350 degrees F. for 55 minutes or until a wooden
  pick inserted in center comes out clean.
  
  Cool in pans 10 minutes; remove from pans and cool completely on a
  wire rack.
  
  Yield: 2 loaves

  With 1/2 ea brown and white sugar
  1 c A.P. flour and 1/2 c pastry flour
  1/4 c cocoa
  2 tsp vanilla
  1 tsp cinnamon + 1/2 tsp nutmeg and 1/4 tsp cloves

  Quite good. We ate the first one warm.

Very weird baking technique. We had a power outage when the bread
had been in the oven just 30 minutes. Since I couldn't use the
computer or do much in the kitchen either I decided to take a short
nap. I woke up three hours later to find the oven still warm and the
loaves done. They were fully baked but had a very soft centre,
almost like a molten lava cake or flourless brownies. I may never
duplicate it again but it was good!

I also made a rye soda bread. I didn't have a recipe to follow but I
figured that the ratio of dry to wet and leavening to dry was pretty
standard so I winged it.

caraway mustard rye soda bread
cat: quickbreads
yield: 1 loaf
      
The dry
1/2 c AP white flour
1/2 c whole wheat flour
1/2 c rye flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 tsp caraway seeds
The wet:
1/2 c sour cream
2 tb yellow hot dog mustard
1 tsp strong prepared Indian brown mustard
enough milk to make a stiff dough

I used my Indian black mustard with onion seed and Miso.

Mix the dry and stir into the wet adding milk and/or additional
flour until the dough can be kneaded. Shape into a loaf and bake at
375 F for 45 minutes.

My grandkids are weird! We all had liverwurst on warm rye bread and
the two youngest preferred second helpings of that over the
chocolate bread for dessert. Liverwurst! Weird I tell you.
