Sounds like a good idea to me.  Also, let you have a taster sample of
your chosen meat and sauce if you prefer it with the house sauce.

It is a lot of work, especially now that the Food Kops are getting so
paranoid. I appreciate those that do want to do the small eatery kind of
business, more so than the big chain places. The other night Steve and I
went to a new-ish one in the area, branch of one in Raleigh.  This place
is called Shish-Kebab and, yes, it is "Mediterranian" eats.  We got lamb
gyros; Steve got dolmas for a side and I went with Greek salad.  Good,
but not quite as good as the other place we tried a few weeks ago.  The
tadziki was not as strong of a garlic flavor; I think they put it all
into the sample of baba ganosh we tried.  The gyros were OK but not
overly stuffed, not much of a "fall out" problem.  My salad was a bit on
the oily side, probably because all the ingredients (except the lettuce
and feta) were in oil.  They did have both walnut and pistachio baklava;
we had the latter.  OK but not great.

You know, in all the time we were in HI, I never bought ox tails.
They're big over there but somehow I just couldn't get past the "fly
swisher" aspect.
