I don't know, I suppose you could sub in 
chicken stock or veggie stock...but I'd use
less or use cornstarch or arrowroot to thicken
it up a bit. Coconut milk doesn't taste that
coconuty to me in this dish. Not much of a 
recipe really basically a chicken stirfry and
add coconut milk (one can) and curry seasonings
to taste.

Still working at the ball park...don't want to 
give that up, it's too much fun! Not looking at
replacement surgery yet but if it continues it 
will be needed in the future at some point.
