That sounds so appetizing. I still think that there is
some hidden commercial potential there.

I know how I know what sulfuric acid tastes like (and,
no, my taste wasn't conc but rather something like 0.1M),
but how does she know?

But I still detect the vinegar, both on the palate and
in the aroma, and for me that's kind of defining. Funny that
this discussion is taking place at a time when I've become
extra sensitive to it.

My version of "Hottest Sriracha Sauce"
Category: sauce, Thai, Chinese
Yield: a bit more than a quart

14 oz applesauce
12 oz pineapple juice
28 oz tomato puree
6 Habanero peppers, ground
3 Jalapeno peppers, ground
1 Tb Chinese ground cayenne
10 garlic cloves, ground
4 oz vinegar - more to taste
salt to taste
4 oz palm sugar (or brown sugar) or to taste

Bring all ingredients except "to taste" ingredients to a boil.
Cook until slightly thickened. Taste for seasoning. Add vinegar,
sugar, and salt to taste. Cook a little longer and then let cool.

This is similar to the standard recipe, except that the real thing
uses plum sauce or plum jam instead of applesauce and doesn't use
as many hot peppers.
